Ahhh, almost Friday! Today I have to shop as by this time of the week, I'm pretty low on what dh calls the necessities . He's so bad about telling me ahead of time what we're out of that only he eats, lol.

Looks like chicken casserole here with a salad. Son will be here for dinner and he loves it.

Hillary's lasagne will be on the menu tonight. All the ingredients are on the sink. Wow, it will make a lot but will freeze some. Using fresh mushrooms and had to adapt the recipe to what I can buy here. Looks like a winner. Hope ds stays around for dinner tonight :) Hilary

Thank you Hillary, it was fabulous. I was hoping to freeze some leftovers for another time but ds ate half (loved it) and wants the rest left in the fridge for tomorrow! He did question whether it was "lo fat" 'cause he says I am making him skinny HA! but I assured him considering the amount he ate the calories would make up for the lack of fat.

A terrific, tasty, quick and easy, lo fat recipe. I did use instant lasagne noodles and may consider making three layers of noodles next time. I used roasted onion and garlic pasta sauce, and four large mushrooms chopped instead of a can of mushrooms. Agree to leave it to stand for about ten minutes to "set".

This Aussie will be cooking this again very soon :)) Hilary

Well I had GREAT work-out so I went and got thai food for lunch(Chicken panang--its so good)anyhow-didnt eat it all so it will be part of my dinner.Ill tack on a salad from my favorite little deli.Older Ds is eating at his game-younger Ds is having left-over stew..AND DH...hmm I will just have to surprise him!!In other words-I dont have a clue!!!xoxo mel

I am being a ***BAD*** girl tonite---Passed by this steak house and it smelled so good and I ws so hungry so I am having rib eye steak (grilled perfectly) mashies--carrots and string beans a salad--onion rings and some whole grain bread--as we speak.
