Good day Ladies ..
I would love to hear some great food ideas from anyone and everyone ..
Healthy would be great but yummy is important as well
Please feel free to share what is healthy, good, easy quick dinner ideas ..
Also if we can keep them all in this thread it would make finding them easier for all.
I will go back and c/p the ones we already have in this thread too .. eventually
That way we all know where they will be when we want them
What will be great is we can always find this thread,
Post in it and that will *bump* it back to the top
In time I will be posting them on our website as well.

TIP if I use beef instead of chicken omit lemon and replace with soy sauce!!!

Here's one of my faves (and it's really tastey too!).
Apple Cinnamon Oatmeal Squares:
Ingredients:
2 cups whole wheat flour
1 cup rolled oats
2 tablespoons ground cinnamon
1 1/2 teaspoon baking powder
1/3 cup brown sugar
4 egg whites (or 2 egg equivolents of a non-dairy egg substitute)
3/4 cup dairy or soy milk
1/2 cup apple juice concentrate
1/2 cup (or more if you wish) raisins or craisins (if you don't like them, they can be left out)
approx. 2 1/2 cups peeled, chopped apples (whatever kind you like!)
Preparation and Baking Instructions:
If you choose to use the raisins or craisins, soak them for about 30 minutes in the apple juice concentrate.
Spray a 9-10" pan with vegetable oil (or use a non-stick pan).
Mix the dry ingredients together, then add the chopped apples.
Mix all the wet ingredients together, then pour into the dry ingredients.
Fold together just to evenly moisten the dry ingredients, then spread the batter into the prepared pan.
Bake at 350 degrees F for about 30-40 minutes (depending on the thickness of the batter once it's in the pan).
The squares will be a bit chewy, which is tastey to me! I love this stuff! O:-)

~~~MEXICAN RICE~~~
2 TBL butter
1 cup long-grain white rice
1/2 cup chopped onion
2 cloves garlic, finely chopped
1 (16 ounce) jar ORtega Salsa - thick and chunky (OR YOUR FAVORITE)
1 1/2 cups water
1 large carrot peeled and shredded **
1/2 cup frozen peas, thawed (optional)**
MELT BUTTER in large saucepan over medium heat.
ADD RICE, ONION, and GARLIC..stirring occasionally for 3-4 minutes or until rice is golden
STIR in SALSA, WATER, CARROT and PEAS
BRING to boil.
Reduce heat to low, cook covered 25-30 minutes till liquid is absorbed and rice is tender.
**I did not have a carrot so I used 1 cup of frozen peas & carrots instead and it turned out wonderful....even better the next day after it had set all night.

Blueberry & Apple Crumble
800 g (28oz) can pie apple
300 g (10oz) frozen blueberries
1 teaspoon finely grated lemon rind (optional)
2 tablespoons caster (superfine) sugar
1 cup quick-cooking oats
½ cup plain (all-purpose) flour
¼ cup brown sugar
½ teaspoon cinnamon
¼ cup chopped macadamia nuts
2 tablespoons butter, melted
Preheat oven to moderate (180°C or 350°F). Combine apple, blueberries, lemon rind and caster sugar in a 2 litre (8 cup) capacity ovenproof dish (or 6 individual 1½ cup capacity ovenproof dishes). Combine oats, flour, brown sugar, cinnamon and nuts in a mixing bowl. Add butter and mix, first with a spoon then your hands, until ingredients are evenly moistened. Spread over the apple mixture. Bake for 30 minutes or until lightly browned on top
I never would have thought of putting blueberries in with it! I'd make this right now 'cept all I have is some instant Maple oatmeal!(lol) Hmmmmmmmmm......(vbg)

Hillary's Lasagna Recipe :)
I use a 9X13 glass casserole dish for this - enjoy!
1/2 box lasagna noodles (about 8-10 noodles) - cooked
1 24oz container fat free cottage cheese
2 - 12oz pkgs (low fat) mozarella cheese
1lb hamb-cooked and drained
1 jar Ragu spagetti sauce
1 can mushrooms
Add Ragu and mushrooms to hamb, layer bottom of greased casserole dish with noodles. Spoon half the hamb mixture onto noodles. Spoon half the cottage cheese on top. Sprinkle 1/2 of one pkg of mozarrella. Add 2nd layer of noodles, cottage cheese, and the rest of the mozarella. Cover with foil and bake about 20 minutes at 375. Remove foil and bake until cheese is all melted (and a little brown -about 15 minutes more). Let cool about 10 minutes, otherwise it gets a little sloppy when serving!
It's only been 4 hours and the meat is so tender it's breaking in half when I lift it out of the crock-pot! So, I've taken it out and I'm letting the juices cool so I can skim off the fat....IT IS HEAVENLY!! Whenever I cooked chops in the pan or oven, I dried them out....this is very moist and tender.
Very simple - - just put chops in pot, stir together 1 cup coke with 1 cup ketchup and pour over pork...sprinkle brown sugar over top of chops and let it cook....mine only took 4 hours in the crock pot on Low......I think my crock is too fast if THAT is called slow.
