Good day Ladies ..

I would love to hear some great food ideas from anyone and everyone ..

Healthy would be great but yummy is important as well

Please feel free to share what is healthy, good, easy quick dinner ideas ..

Also if we can keep them all in this thread it would make finding them easier for all.

I will go back and c/p the ones we already have in this thread too .. eventually

That way we all know where they will be when we want them

What will be great is we can always find this thread,

Post in it and that will *bump* it back to the top

In time I will be posting them on our website as well.

Really enjoyed this one. It is from Annette Sym who has three lo fat cookbooks and is an incredible success story! I did the conversions so near enough is good enough :)

MEXICANA CHICKEN

Ingredients

1 1/2 lbs skin-less chicken breast- diced

1 cup onion sliced

1 cup capsicum sliced

1 x 15oz can diced tomatoes (salsa is even better)

1 x 16oz can re-fried beans

1 teaspoon crushed garlic (in jar)

2 teaspoons dried cumin

2 teaspoons paprika

2 teaspoons dried oregano

¼ teaspoon chilli powder (or to taste)

2 teaspoons chicken stock powder

cooking spray

Method

In a large saucepan coated with cooking spray, sauté chicken and garlic for 4 minutes, add onion and capsicum and cook for 2 minutes. Add cumin, paprika, oregano, chilli powder and stock powder and cook 1 minute. Add tomatoes (or jar of salsa) and re-fried beans and combine well. When boiled simmer for 1 minute then serve.

Tortilla Baskets

Coat a dessert bowl with cooking spray; press a large tortilla into bowl, coat with cooking spray and bake in oven 350 degrees F. for about 10 minutes. Leave to cool in bowl.

For decoration have some mashed avocado and maybe some sliced fresh chilli and shredded lettuce to sit the basket on.

Sounds great Tracy. Just one thing. I find that when making "lo fat" cakes, as there are hardly any fats used there is nothing to protect the gluten, so every time you move the flour you bruise it. I suggest not whisking, but gently folding the wet ingredients into the dry for this reason. If too heavy handed cakes can become tough.

Not sure of the science here :) Hilary
