Good day Ladies ..

I would love to hear some great food ideas from anyone and everyone ..

Healthy would be great but yummy is important as well

Please feel free to share what is healthy, good, easy quick dinner ideas ..

Also if we can keep them all in this thread it would make finding them easier for all.

I will go back and c/p the ones we already have in this thread too .. eventually

That way we all know where they will be when we want them

What will be great is we can always find this thread,

Post in it and that will *bump* it back to the top

In time I will be posting them on our website as well.

I was surprised no eggs

**I think the apple sauce helps bind it Tracy. Most of my lo fat cake recipes use egg whites and sometimes only one whole egg at most. (the yolk contains the fat). I think it's great you are cooking more. It is good to know exactly what you are eating. Hilary

BEEF AND PEPPER CASSEROLE

2 1/2 to 3 lbs chuck steak (blade steak works, basically the cheaper the cut the better)

2 tablespoons flour

1 teaspoon salt

1 oz butter

1 tablespoon oil

1 small red pepper, I call them capsicums (or you can buy them chopped in a can!)

10oz can red kidney beans

SAUCE (combine all ingredients)

15oz can whole tomatoes

1/2 cup dry red wine

1 tablespoon worcestershire sauce

2 tablespoons brown sugar

2 tablespoons white vinegar

1, or to taste, clove of crushed garlic - I use at least four!

Trim fat, cut meat into 1 inch cubes. Coat meat in combined flour and salt. Heat butter and oil, saute the meat until well browned. Transfer meat to casserole, pour over the sauce. Cook, covered, in moderate oven 2 hours or until meat is tender. Add sliced pepper and drained and rinsed kidney beans 30 minutes before end of cooking time.

****The above is a good way to cook it BUT, after coating the meat I put it straight into the CROCKPOT without browning it (no butter or oil :)), along with the sauce and cook it on low for 8/10 hours or so, until tender. Late afternoon I usually add the canned chopped peppers and kidney beans.

Good for cold winter nights and if you cook it the crockpot way no mess!! and no fat!!! Hilary

I'm wondering if that is the same as our Red Peppers that they sell next to the green Bell peppers....is it

**Thanks Tracy, I could not for the life of me think of what to call them. We call them capsicum but you would be right. They are sweet, definitely not hot, about the size of your fist and come in red, green, orange and yellow here (mainly red and green) Bell peppers , now I know. Hilary
