Good day Ladies ..

I would love to hear some great food ideas from anyone and everyone ..

Healthy would be great but yummy is important as well

Please feel free to share what is healthy, good, easy quick dinner ideas ..

Also if we can keep them all in this thread it would make finding them easier for all.

I will go back and c/p the ones we already have in this thread too .. eventually

That way we all know where they will be when we want them

What will be great is we can always find this thread,

Post in it and that will *bump* it back to the top

In time I will be posting them on our website as well.

Oh hon, candy temps (along with oil ones) are wayyy to hot to mess with. :(

for future reference, here's how to test the *ball* stage of candies. The easiest, bestest way is to use a candy thermometer ;) But if you want to learn how they used to do it....
Line up several small bowls (like Chinese tea cups) of ice water.
When testing, drip the candy into one, wait a few secs, then with your fingernail, scoop it out to feel it's texture (soft ball, cracking,

**It really does take a long time to get to the soft ball stage and farther on. ;) And I still use the icy water test-in fact, I probably go through about 6 small cups of it till I'm happy with the texture of the soft/hard setting .
If you like divinity, I'll share my divinity recipe with you around Thanksgiving time. :)
It's not for the faint hearted (it can be tempermental) lol and lifting weights will definitely help with the beating of it if you don't have a strong mixer motor (a hand mixer would burn out quickly).

Thanks Judie for the Chicken breast/goat cheese rollups. I used a blend of goat/feta cheeses and they were great -served it w/ "Mashed Fauxtatoes"


Steam a head of cauliflower till tender. Let drain dry then add to processor w/ 2 TBSP Cream Cheese and a TBSP of butter. Puree till consistency of mashed potatoes. Salt & Pepper to taste.


Next time I'll double the recipe tho - ate half of it standing at the kitchen counter

I will have to try that....I bet it is wonderful...and not hard to put together either!


There is always the danger of "testing" too much while still cooking!(lol)...then nothing left for the bowl!(g)

YES!! My Brother in law makes those for Atkins.If you use lo-fat crm chz --even better for ya!!Perfect sub for those hi-carb mashed taters!!I think I will make some this week--but make the guys REAL taters!!LOL!
