Golly, you are so good at watching what you eat.....I found this recipe for LOW fat mac and cheese...was wondering if you've ever made anything like this or if you think it would be any good...



Low-Fat Macaroni And Cheese Recipe


Ingredients

3/4 cup evaporated skim milk
1 cup low-fat cottage cheese (small curd)
1/2 cup part-skim ricotta cheese
1/2 cup low-fat shredded Cheddar cheese
1/2 tsp nutmeg
Salt, to taste
Freshly-ground black pepper, to taste
8 oz elbow macaroni, cooked
1 tbsp grated Parmesan cheese
1 tbsp dry breadcrumbs



Directions

Preheat the oven to 350 degrees.

Heat the milk in a saucepan over low heat. Add the cheeses slowly to the
milk until they melt, stirring constantly. Remove the cheese sauce from
the heat, and add the nutmeg, pepper, and salt (if desired).

Mix the macaroni and cheese sauce together. Pour into a 2-quart casserole
dish. Combine the Parmesan cheese and bread crumbs. Sprinkle the mixture
over the macaroni. Cover and bake for 15 minutes. Remove the cover and
continue to bake for 5 more minutes until top is browned.

This recipe yields 6 servings. Serving size: 1 cup.

Exchanges Per Serving: 2 Starch, 1 Very Lean Meat.

Nutrition Facts: Calories 203; Calories from Fat 24; Total Fat 3g;
Saturated Fat 1g; Cholesterol 14mg; Sodium 331mg; Carbohydrates 28g;
Dietary Fiber 1g; Sugars 6g; Protein 16g.

Comments: By using evaporated skim milk, low-fat cheeses, and fewer bread
crumbs, you'll have a dish this winter that's familiar but a lot less
fattening!

I had to think on this one Tracy.
I just *happen* :::blush:::to have a small box of mac&cheese.


It says it's 260 calories with 25 gm of fat, total fat:2.5 grams, saturated fat 1.5g, sodium 560mg, carbs 48g

I'm thinking of doing the PUmpkin Crunch again...it IS healthy - - eggs with omega, and pumpkin has tons of vitamin A!!

Golly - - I went ahead and tried it...it is Not Bad!!(lol)


Granted, I used fatFREE evaporated skim milk and fatFREE shredded Cheddar...I DID add 1/4 cup of a Mexican 4Cheese mix......


I like it...and I didn't feel like I had to run 5 miles to work it off either!
