I stocked up on a colorful array of veggies and fruits. I'm really craving them and that's when I do my best with healthy eating; as opposed to the times where all I want is fried food and ice cream, yikes!!

I add olive oil, and a wonderful veggie mixed spice. Spread it out on a cookie sheet and bake for 30 minutes at 425 degrees. Yummmmmmmmmm!!!
Friday: Kids are having a pizza party at church for the last night of VBS, so dh and I will be having grilled chicken, with peppers and onions, and maybe some brown rice.
Sat: Not sure, because it's going to be a crazy busy day, I have a birthday party, and then I've got to get my program ready for Sunday night.
Tonight's meal sounds great Melissa, Understand on that Chinese for Sunday .. although yummy! Start thinking ahead/now what you'll have. That may help :)

Breakfast was a date & sunflower seed scone with butter, accompanied by a pint cup of tea, no sugar...
Lunch will be some chicken casserole I have in the freezer which has rice in it...

I didn't get to fix my chicken on the grill last night, so I'll do that today...with some peppers and onions, and eggplant on the grill.
Sunday ~ dinner with the inlaws and it's Chinese food......scares me. I love Chinese food, but it's fattening and I will swell up like a balloon.
