Hmmmmm... ah posted a chocolate cake recipe on my blog a while ago, so will bring it over here...
1/4 lb of margarine at room temperature
2 cups of sugar
6 tablespoons of cocoa
2 teaspoons of vanilla extract
2 teaspoons of baking soda
1 teaspoon of salt
2 cups of cold water
2 tablespoons of cider vinegar mixed into the water
3 cups of flour
Cream margarine and sugar, then add other ingredients. Beat all together and put in greased or non-stick pan. Bake at 350° for one hour or until cake center springs back.

My favorites:
Pecan Pie (it's better w/homemade crust, but we use pre-made)
Ingredients:
3/4 c. sugar
3/4 c. light Karo syrup
3 eggs
2 tblsp. butter
1 c. pecans
1 tsp. vanilla
Mix ingredients together and pour into 9 inch pie crust. Bake at 300 degrees for a little over an hour.
Pumpkin Bread
Ingredients:
1 pound can solid pack pumpkin
4 eggs
1 c. vegetable oil
1/3 c. water
3 1/2 c. flour
3 c. sugar
1 tblsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
Preheat oven to 350 degrees. Grease and flour two 9" x 5" loaf pans. Combine the pumpkin, eggs, oil, and water, and mix well. Add sifted dry ingredients (flour, sugar, pumpkin spice, baking soda, and salt) and blend completely. Pour into pans and bake for 1 hour and 10 minutes or until done. Cool.
