Saturday i made a big pot of mac cand cheese (it's bassicly all we can afford right now) and it was good ( it cost 29 cents a box) so we eat it a lot. i've figured out why i'm so depressed the last few weeks. when my mom used to have her manic episodes and was drunk or on drugs so much she wouldn't cook and the only thing my older sister (by 18months) knew how to cook at the time was mac and cheese so we had it every night for weeks and weeks. sometimes we would have it for breakfast lunch and dinner. We have been eating a lot of mac and cheese because it is cheep and i like it but it occured to me last night that is why i've been triggering so much because it brings back so many bad memories.

so as i'm sitting here typing i'm eating a bowl of mac and cheese.

Your childhood sounds alot like mine was. Only, our main dish was peanut butter and jelly sandwiches. I remember calling the police one morning because we were all out of stuff to make them, and my mom was sleeping off a night of drinking. (Can you believe that I can actually laugh over that now? She could have gotten into alot of trouble) We had mac and cheese alot too. I'm sure it can get old. I do remember my mother making some kind of goulash dish with two boxes of mac and cheese. She'd use that, a can of stewed tomatoes, and tomatoe paste, and add hamburger. I loved it. Peas or green beans go great with it along with bread and butter.

Im sorry for your situation. A couple of months ago when we were both unemployed we got "help". That is what it is there for. SpaghettiO's are cheap too and tuna and macaroni. I have some great cheap recipes if you like. I can feed 4 of us on $50 per week so I can give you some pointers. Hang in there and stay away from the mac and cheese lol.

One of my favorites from when i was a kid as a snack is butter on a cracker. I learned a few years ago how to make home made butter and my kids and i will make green or blue or red butter and they love it. havna't made any in a while i'll have to make some again it's pretty cheap and easy.

Well we bought our house back in march and because our intrest rate is so high it's hard to make the payments. we have a few more months of penny pinching before we can try to refinance. I make 130.00 a week for the little one i watch right now and i'm giving all of that to my dh to help pay the bills then a couple of days a week i watch my friends kids over night and i keep a little of that for gas but mostly give that to him too. it's getting tighter as the months go by and we are having to keep tighening the straps we've been through this before and we survived we can do it again. it's just eating a lot of mac and cheese and bologna sandwiches.

Now PB&J i'd looooove to have those but my two youngest are allergic to peanuts so not pb here but when i spend the night at my friends house i get my fill. I'll call my friend dd in a little while and place my order for 2 pb&j sandwichs and they'll be waiting for me for dinner tonight. last night we did have spghetti tonight dh and the kids are having tuna sandwiches. we'll get by i wish we did qualify for food stamps but they say dh makes too much money. and what is killing us is the medical bills especially my rx's. i'm out of my insulin right now an dhave been for two weeks we are waiting for dh to get paid this week and try to get it then. plus the kids had dentist appt.'s yesterday and ihad to cancle them. you don't realise what you put yourself in for when you have a large family and when you start you don't think about the financial aspects of it. I love all of my kids and i'm glad we had them ( sometimes when they get mean and nasty i wish they'd go away though lol) but i can't say i wish i hadn't had any of them.

I know SO many people who have been turned down for fs for making "too much" money. I think alot of us working class people are asking ourselves when we are told this "Where is this "too much" money at? I haven't seen any of it." lol. If you can't get fs, can you at least get on some kind of discount program so you can have your insulin at all times? That is VERY important. Is there a community healthcare clinic in your area? They might help out with a dentist too.

Hey, what about starting a thread under "The Bright Side" section specifically for recipes? We could include a variety of them--personal favorites, "cheap eats," family meals, etc. I have a few I'd contribute if anyone is interested in such a thread let me know! Hugs, Lori
