it's summertime, & the eating is easy

My herbs are popping up in their peat pots under the grow lights! I am beginning to make the warm-weather dishes I haven't made in five months. It has been cold and raining the last three days, but it does feel like spring is coming! The trees are budding, and there are signs of flower buds on our lilac bush. Kids were playing a rousing game of soccer at the park we can see out of one of out back windows.
Pasta salads (thank goodness for pastas made from potato, soy, and rice flours that I can eat despite my Celiac Disease), potato salads, fresh vegetables to make salads good enough to live on. I have a Wild Rice and Corn salad with tomatoes, green onions, and balsamic vinegar that I could eat every week. Dad will plant cherry tomatoes so sweet and delicious we eat them for snacks when there are cookies (again, gluten free), chips, and all the other goodies available. Our neighbors will pass us "regular" tomatoes and cucumbers and whatever else they grow too much of, and the farmer's markets will be out and even the grocery store will have better stuff at better prices (even if I'd still rather pay the farmer directly!)

People saying you look healthy doesn't men your symptoms aren't valid. Just because some physician didn't listen doesn't mean it's all in your head. Just because there is no definitive test yet doesn't mean the disease doesn't exist. You know you body- trust yourself!

I'm loving that our plants are coming up. The house we moved into has gardens all over in our large back yard. Everyday there is new stuff! Not to mention seeing people out and about walking more. :-)
I'm eating a lot of fresh fruits/vegetables. I havn't been to my farmers market yet, but I have to go soon!!!
I'm looking forward to being done in June, and graduating!!! :-)
