Okay, I'm no doubt late for Memorial Day, but it's just the start of summer!
Post your favorite veg recipes so that we can all enjoy them this summer and will have ideas in our heads for what to suggest if a host asks what they can make for us or need to bring our own main course (which would be "disguised" as an extra salad...)
This recipe was suggested by a member of the Celiac Disease board and is from the vegetarian section of www.Allrecipes.com
Picnic Pasta Salad (I scaled it for 6 servings, which is a main course for 2 meals here, and don't trust myself to multiply this late- you can have it adjusted at AllRecipes)
1/2 lb seashell pasta (I use rotini since they don't make gluten free seashells)
1/2 C each chopped mushrooms, cucumber, and broccoli
1/2 C white sugar (I halve that and it is still quite sweet)
1/4 C plus 2 TBSP vegetable oil
2 TBSP prepared mustard (I personally prefer dijon)
1 TBSP mayonaise, from the source of your choice (the small amount makes this salad a bit more safe for picnics than regular ones!)
2 TBSP vinegar
shredded cheddar, from the source of your preferance. The recipe calls for 2 TBSP but that's far too little for me!
salt and ground pepper to taste.
1) Cook pasta in a large pot of boiling salted water until al dente. Rinse with cool water. Drain well.
2) Meanwhile, combine vegetables, sugar, oil, mustard, mayonnaise, vinegar, and cheese in a large bowl. Season with salt and pepper to taste. Mix well. Stir in pasta. Refrigerate 2-4 hours before serving.

People saying you look healthy doesn't men your symptoms aren't valid. Just because some physician didn't listen doesn't mean it's all in your head. Just because there is no definitive test yet doesn't mean the disease doesn't exist. You know you body- trust yourself!
