weekly food themes!

Starting this week, I will be posting a "theme" of the week. Let's see how many recipes and ideas we can generate! I have a list of topics, from ethnic cuisine to different needs (like low cost meals, ones high in protien, or kid-friendly ones). If you have an idea, send it on to me (I've been meaning to correct the address in my profile- my e-mail is kattbailey3@yahoo.com) and I'll add it to the list. There are 52 weeks in the year, so don't be shy if you have an idea, whether you have no idea what to do with all the produce your gardening neighbors gave you or need an idea for a potluck or just have a recipe you'd love to share!

In honor of back to school time, let's start with packable treats. Whether it's a great sandwich combo (it doesn't even have to be a formal recipe) or a dip that will convince kids (or brownbagging adults) to eat their veggies at lunch, or something unique that can be wrapped up and eaten on the run... Snacks work, too. Even if you just have a hint on a way to pack foods so they don't spill or stay hot or cold, let us know! There's more to lunch than PB&Js and those little boxes of raisins! Be creative and give us some ideas!

BTW, Emily and I have discussed putting these "collections" of recipes and ideas on the website, so we should gather quite a bit of evidence that even vegetarian lunchboxes aren't boring!

People saying you look healthy doesn't men your symptoms aren't valid. Just because some physician didn't listen doesn't mean it's all in your head. Just because there is no definitive test yet doesn't mean the disease doesn't exist. You know you body- trust yourself!

i'm not packing any brown bag lunches yet...but one of my favorite treats for at home is taking a wrap, smothering it in hummus, adding lettuce, tomatoes, and any veggies you want (i like adding cooked and cooled eggplant, zuchini and squash) add soy cheese and even soy dill dressing if you like, wrap and enjoy! for an at home treat you can also add grilled boca chik'n patties (sliced and diced) and for vegetarians add some morning star bacon! but not for vegans though, as it contains milk products...(which i found out AFTER i bought it, DOH shoulda looked at the label more closely).

oh, and mcCormick bac'n bits are totally vegan too, so add them freely ;)
