Hi all!  I am Amy and am exploring the vegetarian options.  I would love to join y'all's discussions.  I have purchased some tofu and am looking for some creative ways to fix it so that my DH and children will be open to at least trying it.


I would appreciate any suggestions/comments regarding this lifestyle change.

I also like to throw cubes of tofu in some stir fry.


DH acts like he doesn't like it, but whenever I sneak it into his food he doesn't complain. I guess the idea of him knowing that it's in his food grosses him out.


My DS who is 8 months old eats tofu as finger foods, so he doesn't mind it.

I don't use much tofu. We have one burger recipe, which Mom and I like but Dad doesn't much. We haven't done other recipes, really. We tried this marinated tofu recipe early on that turned out so bad that it's a running joke. I'd be willing to experiment, but while I'm cooking for Dad I'm concentrating on other protien sources (I'm 27 but live at home due to my health and Mom's disability).


But a vegetarian diet is not dull. I cook a greater variety of dishes than Mom did when she was not only using meat (I'm the only full time vegetarian- Dad heats up a microwavable, ready to serve thing once or twice a week, which Mom eats a bit of as a side dish. Dad has his plate split between the vegetarian entree I made and his meat on those days). And I cannot eat wheat, barley, or rye because of a medical condition! There are so many options out there once you start looking through the stores and cookbooks. I really only feel limited when we're traveling and I'm trying to eat at strange restaurants, and that's mainly becasue most of their vegetarian options are pasta dishes. I eat a lot of vegetables at home, but a lot of reastaurants think veggies are salads and baked potatoes and quarter cup servings of green beans, often overcooked, put next to the meat. There's a lot more out there, believe me! This can be a wonderfully varied, delicious diet if you put a bit of thought into it!

People saying you look healthy doesn't men your symptoms aren't valid. Just because some physician didn't listen doesn't mean it's all in your head. Just because there is no definitive test yet doesn't mean the disease doesn't exist. You know you body- trust yourself!
