We were talking about beans a short while ago, and it got me thinking. The problem with dried beans, while they are cheap, is that they need to cook so long. Well, I was watching someone use a slow cooker and it occurred to me that it's the perfect solution!


I took a recipe that's beans cooked in a herbed and garlic broth. Soaked the beans overnight and around 7 AM I put them in the cooker (I found a chart that gave approximate slowcooker times for adapting recipes in Family Circle and it and a bean and meat recipe gave me some idea of the cooking time. A half pound of Great Northerns with 4 C water (with herbs- 1-2 t- and 4 cloves garlic) cooked in 8 or 9 hours. It would vary depending on bean, amount, and cooker, but it is a solution. If I wanted the beans for another recipe just using water or whatever the beans would normally be done in would have worked, of course. And you don't have to be home three hours before supper and stuck in the kitchen, either!


The slowcooker liners were also helpful, especially since our crockpot is normally used with meat!
