Split Pea and Barley Stew

Ingredients:

1/2 cup dry barley
1 bay leaf
1 clove garlic, chopped
5 cups vegetable stock
3/4 cup yellow split peas
1 tbsp lemon juice
2 tbsp olive oil
1 medium onion, chopped finely
2 carrots, peeled and chopped
1 medium potato, peeled and chopped
1 tsp salt
cayenne pepper, black pepper, and hot sauce to taste
Instructions:

Add all ingredients to a pot and bring to a boil. Cover, reduce heat to low, and simmer for 1.5 hours.
Makes 4 side servings, or 2 main dishes.
To freeze, leave out potato.
