What's on your sandwich?

Sometimes when I'm home by myself, I like to make a quick meal. Usually it's a sandwhich on italian bred with lettuce, cucumbers, onions, jalapenos, and mustard. It can get tiresome. So I want to know what you ladies use to make a sandwhich!

I love bean sandwiches, sometimes refried beans but any beans'll do. I most often have melted cheese with the beans & am looking forward to the day I can afford vegan cheese :D

I love BLTs with, of course, vegetarian bacon (Morningstar Farms).

I also make veggie chicken patty sandwiches a lot on a bun with sauteed mushrooms and onions, lettuce and tomato.

I'm not a sandwich lover....never have been but I do enjoy this one...

2 slices of farmer's style rye bread.
Dijon mustard
Mashed avocado
Roasted vegetables such as, assorted colour bell peppers, zucchini and eggplant.
(i just cut them and put them on a baking sheet under the brioiler and turn a few times then I put them in a plastic container and use them to make this sandwich or to top pita pizzas.)
a nice piece of crispy lettuce.

This works for me but I don't have it very often.

I have never tried refried beans on a sandwhich before. I am going to try this.

I told my husband about the BLT and he got so excited! We've seen the bacon before at stores, but never tried it. We went grocery shopping yesterday and bought smart bacon, lettuce, and tomatos. He has tried one yet, but I'm sure that he'll like it!

Thanks so much for sharing your chicken patty recipe. When I eat the chicken patty I just eat it with ketchup and that gets old you know. The mushrooms on it sounds good!

Cheap and fast....natural peanut butter, low sugar jam on whole wheat. Best with a bowl of vegetable or lentil soup.

When I'm feeling more ambitious, I've become a fan of pan-fried falafel patties and tzatziki (sp?) in whole wheat mini pitas with a handful of olives.
