TWO CRUST PINEAPPLE PIE
Prepare crust for a 2 crust pie, here is the recipe I use:
2 cups flour
1 tsp. salt
2/3 cup lard (YES, LARD! Makes the flakiest crust. My Gran taught me to use it and it wont' kill you once in a while! LOL!)
5 to 7 Tablespoons ICE cold water
Mix the flour and salt together, then cut in the lard. Next add 5 T. of water, mix until it forms a ball. If too dry, add 1 T. water. Then mix, if still dry, add the next T. of water little by little, too much water will cause dough to be sticky.
Divide dough in half and roll out the bottom crust on a floured board. Place in piepan.(just a regular pan, NOT a deep dish) Next prepare the filling
Pineapple Filling
2 C. crushed pineapple ( I use a large can of Pineapple, drain it slightly.)
1 cup sugar
3 Tablespoons flour
1/4 tsp. salt
1 egg yolk
2 Tablespoons butter
1 tsp. Almond flavoring
Mix all ingredients together and pour into pie shell. Roll out the top crust, place on pie. Make small slits in top crust to let steam escape. Brush the top crust with a small amount of milk and sprinkle the top liberally with sugar.
Bake in a 450 degree oven for 10 minutes. Then lower heat to 350 and bake for 30 minutes or until the top crust is golden brown.
Let cool on rack.
This pie is super good when you enjoy it with a fresh cup of coffee! Let me know how you like it!

I absolutely LOVE pinapple, but have a question. If you use a store bought crust, it probably wouldn't turn out as well, would it? I do not have much luck with making my own. You'd go into hysterics watching me trying to make a pie crust.
I hope you and your family are settled and happy now. You deserve it.
