So I'll print it as is in the cookbook, then print the changes I made this time. I do it differently every time depending on the ingredients I have or don't have on hand at the time.

Ice Box Bran Muffins

Mix 1 c Crisco, 2 1/2 c sugar, 4 eggs, 1 qt buttermilk and 4 c Kellogs All Bran in the order given.

Pour 2 c boiling water over and mix.

Add 5 c flour, 1 T salt, 5 t soda and 2 c Nabisco All Bran.

Bake at 400 for ~25 min. Will keep a month in the fridge.


I didn't have any shortening so I used 1/2 c veg oil and 1/2 c olive oil.

I used 1 1/2 c brown sugar and 1 c molasses.

I mixed 1 qt milk and 1/4 c vinegar, let it sit a while and added it instead of the buttermilk.

I added 4 c whole wheat flour, 1/2 c oatmeal, ~1/2 c flax seeds partially powdered in the blender, a spoonful of soy flour, and a small handful or wheat germ. In the past I've added corn meal, 7-grain cereal and oat bran.

Couldn't find Nabisco All Bran so I used some kind of bran flake...2-3 c.

I also threw raisins in some of it, choc chis in some and, to try it out, choc covered raisins in some of it.

I love these muffins because you can easily make them up fresh whenever you want one, two or twelve and I feel like they are tremendously healthy. I don't feel guilty at all about eating them.
