Raspberry Bread Pudding Recipe!

Hey, y'all KNOW I'm always happy to share a recipe, and yes Gabby, you could substitute blackberries...heck, I'm pretty sure strawberries would work! So here it is!

RASPBERRY BREAD PUDDING

8 slices day old French bread or regular bread, crusts removed, cubed

1 Tbs. butter, melted

1 cup fresh raspberries

1 cup half and half or light cream

2 large eggs, slightly beaten

1 tsp. vanilla extract

1 cup sugar

Preheat oven to 350 degrees. Toss bread with melted butter until coated. Place into a 1 quart buttered baking dish. Sprinkle evenly with raspberries. In a bowl, whisk together half and half, eggs, vanilla and sugar until blended. Pour over raspberries. Place baking dish in a pan of hot water reaching half way up the sides of the original pan. This keeps the bottom of the pudding from burning. Bake 45 minutes OR until set, meaning a knife poked into the pudding will come out clean.

Remove dish from water bath. Serve topped with whipped cream or sprinkle with granulated sugar. Serves 4. Garnish with fresh raspberries if you wish.
