Gabby's "Friday's Five" question prompted me to share this recipe. If anyone here besides me grows nasturtiums this is a terrific salad. The raspberry/mustard vinaigrette is outstanding. If you don't have raspberry mustard just make it by whisking 1 Tbsp Dijon with 1/2 Tbsp raspberry jam. Both the leaves and the flowers of the nastutium are used for eating. The flowers have a gentle spicy/peppery flavor.

If you don't grow nasturtiums just know they are an easy flower to grow. They are lovely and delicate and grow continuosly all summer. I use them as a border for my herb garden.

Ingredients





1/3 cup olive oil

3 tablespoons balsamic vinegar

1 shallot, minced

1 tablespoon water

1 1/2 tablespoons raspberry mustard

1 teaspoon white sugar

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

12 cups torn assorted salad greens

Edible nasturtiums (optional)



Directions

1 WHISK together first 8 ingredients in a large bowl; add salad greens, tossing to coat.

Yum, and I bet I could use sweet n' low instead of the sugar. My aunt makes her own dressing and she uses sweetener also, works out great. Of couse she grows her own lettuce also. Embarrassed to say I've never heard of nasturtiums, so will have to check this out. HUgs and Love, Gabby
