In the summer menus change around here from hot meals to bbqs and salads. Whats your favorite meal and snack in hot weather? And your favorite drink?


      I like a nice anti pasta with a small fruit salad (must have watermelon in it Lol). I drink to much ice coffee but just love it.  I'm trying to switch that to water.


Now I like bean salads but don't know how to make them. Anyone have a quick and simple recipe?

A large Greek salad, some grilled fish or shellfish, fresh berries and peaches w/ yogurt for dessert and a glass of champagne.

Grilled salmon, corn-on-the-cob, cole slaw and lemonade! Sounds like Fourth of July, and my mouth is watering!

I don't really have a favorite. It depends on what I have a taste for.


One really good salad is chilled, poached chicken breast slices with slivers of sweet onion (Vidalia if available) and avocado with a green goddess dressing on crisp lettuce. It's great with some crusty bread.


I have a really good Greek pasta salad that I like. It's tri-colored rotini with crumbled feta cheese, grape tomatoes and kalamata olives in a Greek dressing (I like bottled ones, fast and easy). Mmmm, a piece of the pasta with a sweet tomato and some salty, spicy cheese. I'm getting hungry for it!


Dh has a smoker, and we'll fill it up a couple of times during the summer and let it cook slowly all day, with hickory chunks. We'll put on a pork shoulder, a beef brisket, turkey legs, chickens and whatever else we have on hand. It's great for parties, and whatever is left gets packaged up and I freeze it. Nothing like some pulled pork in the middle of a blizzard! LOL

Love anything on the grill.....hamburger, steak, fish, chicken, hot dogs.....YUM....also love potatoes cut up in foil, with butter, salt and garlic pepper....on the grill....With fresh fruit and or a salad...

Thank you I'll be sure to go to that site. We live in the country too and cook out alot in the summer with Hamb. and hot dogs. A little potato salad and baked beans like you but I have had bean salad and liked it so thought it would be a nice change. I get tired of the same old thing.

That sounds good Sue (I hope you dont mind if I call you Sue) but shell fish around here is very hard to find and very expensive. However I grew up in NH and spent the summers at the ocean and just love all kinds of seafood. I was raised on it. That's one thing I really miss from my childhood.

Now that sounds like a good simple meal. I'll put that on my list. One thing we have around here is alot of salmon.

I'll bet it does Jan. And you are sure set up good for those storms. I like bbq chicken but we don't do pork much they say it's unhealthy. Of course a few bbqued ribs are awful good Lol.
