My 8x4 raised bed is full of spinach and mixed greens. I sauteed garlic in olive oil, added spinach leaves and cooked just until they were tender - mmm. Today I will gather greens and start having a salad with every meal. Once the weather gets hot, the plants will bolt and go to seed quickly. BTW - the bed is 18" high, and it has kept the rabbits at bay. Makes me feel like Mrs. McGregor, but they have plenty of weeds to munch on.

Oh Jacquie, I envy your nice fresh vegetables and fresh salads that will soon be on your plate.

I make a creamy chicken soup with a dab of mustard for tang (original recipe used white wine)and stir in thin shreds of greens. Sells for a fortune in local restaurant... Also add thin slices to stir fry instead of bok choy.

Having a raised bed is the only thing that made it possible for me to raise veggies. HD did all the work, we used 6x6 treated lumber posts, held together with rebar and it took lots of bags of potting soil, but I figure it was only a one time deal. The prices at the farmer's market here really went up last year, because so many drive the food from other areas. I imagine it will be way higher this year, with the price of gas. I just noticed that some heirloom tomato seeds I planted have finally sprouted in a separate pot. These will go in the bed much later and will be producing after the others are done. I put up string trellis nettting and have snow peas growing up it now. When they are done, DHs favorite Blue Lake green beans will grow on it. I can get 2 crops of everything in this small area. Of course, I let the farmers supply me with corn and zucchini - never could get them to grow before the squirrels and bugs ate them up. They're cheap and plentiful.
