DH's buddy is visiting for next 2 days, the temps are typical cool fall, so it was time for a big pot of chili. I rinsed the salty liquid off the beans to keep the salt level down, plus low salt tomatoes and V8 juice. It's amazing how we've gotten used to less salt. I put the shaker on the table so each person can add as much Lite salt as they want. Being retired means I now have time to make these dishes that taste better if they are simmered on the back burner for a while. DH likes chili so much that he doesn't want any side salad, etc. - just saltines with butter. I cooked some sugar free chocolate pudding in the microwave and will add sliced bananas later when it cools. Temps tomorrow will be back near 80, so I'll make the last potato salad of the season.

The guys have been busy in the basement with model RR projects all day, this after our friend drove for 5 hours. Bet I'll have 2 guys dozing by 8 PM - LOL. Our cats are already hovering around, waiting for bedtime, as the friend invites them to sleep with him (something we don't do).

Does anyone else get as much pleasure from the changing seasons? I just love the traditions with each season. Guess that's why I will always live in the Midwest.

jacquie i enjoyed reading about the chili simmering on the back burner while the guys were busy in the basement.sounds like a nice time at your place,and what better dish to celebrate a good time with a good friend in a beautiful season,like autumn,chili!! its the best!! let me say i do enjoy each season,with fall being my favorite,

I made chili last Sunday.
