Smells of cool weather

We have A/C on all summer, but I still get in a "cool" cooking mode - mostly grilling and quick fix top of stove dinners. Today I got out my ancient electric skillet to cook a pot roast. I figured if I had to dirty a pan to brown the roast, I might as well use the same pan to cook. I make ice cubes of low-sodium beef broth, so just dumped them in along with sliced onions. House smells great, I will turn it off when we go out for a while this afternoon, then continue cooking when we get back. One trick I've learned is to remove the roast when it is just barely tender, let it cool a bit, slice and cook along with the carrots and potatoes I'll add. This lets the dry, cheaper meat soak up the juice and I don't need to make gravy. BTW - an electric skillet makes great chicken and dumplings. There's enough surface area to make a lot of dumplings which don't stick together.

I made a big pot of vegetable soup in my slow cooker on Saturday, so tonight we are finishing up the soup.
