If you don't see much over the weekend, it's because I'll be in the kitchen a lot. Youngest (6) DGrD is spending the day making cookies with me. I use cookies as a gift to teach the little ones about sharing. We will make thumbprint cookies with jelly, plus cocoa crinkle balls - both something little hands can do. Later we'll get on my PC and make personalized gift tags for her to take home and print out, plus foam soup bowls and red plastic wrap to put the gift packages together. We will save DH a plateful, but most go home to DSs house. Sunday will be the first batch of very thin Swedish butter cookies. They are so delicate I can't be distracted with a wee one. Next Saturday it will be the 8 yr DGrDs turn, then Sunday will be a repeat of butter cookies. DH loves those and is already asking when I'll make some. I did get the last batch of bourbon balls made today.

LOL lottie you are too funny. i got a call from my grand daughter yesterday,and asked if she could come next wknd to bake cookies..isnt that ironic..im looking forward to it,as i wasnt going to bake at all,i guess i was hoping for some of jacquies cookies to roll my way.LOLOL min

This turned into 2 days of baking. I realized that 8 yr old DGrD would be making gift cookies next Sat. after school was out for vacation and she wouldn't be able to pass them out to teacher,etc. So, DDIL dropped her off after church today. Both girls chose similar recipes - Chocolate snowballs, peanut butter kisses and stir-drop-sugar cookies. If you've never had these sugar cookies, they are great to make with kids and look very pretty set out on a plate. They use oil instead of butter, no electric mixing needed. Before dropping dough in spoonfuls on the the sheet, the trick is to have bowls of color sugar ready, and a glass with a smooth bottom for each color. The bottom of the glass is buttered, then dipped in the sugar, pressed lightly into the mound of dough. All the colored sugar is transferred to the top of the cookie. There is then enough oil on the bottom of the glass to dip back in the sugar for the next cookie, and keep repeating. These cookies look like sparking circle ornaments. They are rich and crisp, don't get soggy and keep for weeks.

We created personalized gift tags on my PC when we were done, so the girls are all set. I was worn out when we were done, so DH drove her home. Thanks goodness I had leftover meatloaf - we had sandwiches, canned baked beans and cookies. How's that for unhealthy - LOL. Oh - there were SOME veggies in the meatloaf.

Chocolate Cake Mix Cookies
1 chocolate cake mix (2 layer)
1/2 c. oil
1 egg
Instructions
Mix well. Drop on cookie sheet. Chill dough for 1 hour. Make small balls, roll in powdered sugar. Bake at 350 degrees for 10-12 minutes.

My Swedish cookies are rolled thin and cut. They burn easily and the dough needs to be refrigerated between rolling out batches.

I bought an electric spritz maker when my ancient crank model gave my wrists such a hard time. Once I got the hang of how long to press the switch, it is a breeze. I LOVE it.

Ooh - I love them even before I taste them! Chocolate, nuts and coconut! I'd need one of those alarm gift bags (have you seen those??) to keep me from overdosing.

I still need to make a trip to one of the craft stores for mint chocolate melting wafers. I melt them in the microwave, then dip Ritz crackers in. They set up on a rack over waxed paper so the chocolate can be re-used. They taste just like Girl Scout thin minds and are another quick no-bake treat.
