Potato scramble night

DH & I are at the end of the bout with stomach flu and are actually feeling hungry. Been eating chicken soup for 2 days. I'm going to use the non-stick pan to "fry" some boiled potatoes, add beaten eggs and some crumbled leftover bacon. Haven't had this in ages and it sounds like something which will sit well. Done nothing much today except wear out the carpet between the sofa and the bathroom. Skipped my tutoring session, doubt if I'll go to Yoga on Weds. Hope DH feels up to getting some groceries, the milk is running low. I do always keep both powdered and evaporated milk on hand for emergencies, though.

Your potato scramble sounds good, and I'm glad that both you and DH are starting to feel somewhat better.
It was perfect for our sensitive tummies. Neither of us needed any roughage, so we skipped a side veggie. We did laugh about this being an old standby from our early years when DH was in school and I had the only job as a secretary. DH remembered all the cookbooks on how to cook hamburger 100 ways. Now, I mix ground turkey with the beef, but make a lot f the same dishes. I do cut way back on the salt and fat, though.

Yep, the spuds were on sale - 5#/$3.00. The are the small red ones. I read that cold boiled potatoes actually can lower glucose levels -

Anyway, for $3.00, we got enough to really enjoy. Last night was potato salad, now I have enough leftover for beef stew on Fri.
