I actually love spinach and we put it in a variety of dishes. We also eat it fresh in salads.

I enjoy spinach salads, too, but my husband doesn't care for them much so I usually serve spinach lightly steamed or sauteed. One of my favorite ways to dress it up a little is to saute it with a bit of olive oil, and add toasted almond slices and mandarin orange segments just before serving.

Try that raw spinach (baby leaves are best) in a salad with those mandarin oragnge slices and some crumbled bacon and a nice vinegarette! Or substitute strawberries and make it a basalmic vinegarette dressing! Wonderful.

One of my faavorite ways to east steamed spinach is with crumbled hard boiled eggs and bacon on top...

Oh yum! We are definitely having a spinach salad with dinner, whether my husband wants it or not! (I've never understood why he likes it lightly cooked but not raw. Really, the way I prepare it is more "wilting" than cooking.)
