I haven't posted in a while, and I have missed you all. I did get to chat late last night, walked in to quite a party and got bounced right out after a few minutes. I couldn't get back.

Today has been a beauty, sunny and a high of 70, but it is going to be cooler tomorrow. Those Texas storms are headed this way.

Someone came by the office with a truck load of fresh picked strawberries for $7 a gallon. We all bought. Now I need to figure out what to do with them. They are so sweet and smell so good.

Good news from Susie and Franni. SusieK, I am glad you are back in the baking business. Kacee, I am going to check out that site after this. Sounds interesting. Hope, it is good to see you home safe and rested. Ellen, it is nice to see you to know who we are posting to.

A teacher friend and I had an early dinner so there is no kitchen to clean, but I need to take care of those berries. Have a good Friday and I will see you this weekend.

I hope y'all like them berries. I don't like strawberries but had a craving for them with DD1. I haven't eaten any since. I make my strawberry shortcake with raspberries. I only know that they are expensive so if $7.00 a pound is a good deal, I don't know. Kathey

Hi Brenda...I have been getting some strawberries at the store...think they are from Californina. I need to head over to Shallotte to Holden Brothers' Farm and see if their strawberries are ready. You can pick your own but I usually just buy the ones already picked in their store. Will you freeze them?

Enjoy...Pab

I just bought a quart of Strawberries and I think they were about $1.69 so that price is right in there isn't it? I just cut them up and we sprinkle a little Equal on them and eat them with a spoon. I really like to squish them but my squisher got broken and the I don't have a strong enough fork to do it.

You can also freeze them without any sugar and if they need it when you thaw them you can add it then.

They are so good just fresh with out making something with them...lol....Janet

I'll take care of them for you! He,He,He! Some how I do not think you can trust me to really take care of Strawberries for you, they will all disappear! They are my favorite! Yes I'm going to bake a loaf tonight! so have to go and get that mix started! I wondered what happened to you last night! Do not take the stems off the strawberries till you are really ready to freeze them or eat them! unless you are making something with them! They last longer with the stem on. and no sugar either, only the ones you are going to eat! Yumy! I envy you, although I still have some in the fridge! That is my 2cents worth! Hugs SusieK

Hi, Brenner. Haven't been here much myself. Enjoy the strawberries. I personally love them on vanilla bean ice cream. Yum yum.--Pat

Bren- what about a strawberry pie. We get strawberries in the city, but they are not sweet. Yours sound just yummy. Here's an easy recipe:

Home > Recipes

Strawberry Pie

Recipe Courtesy of Emeril Lagasse

Show: Emeril LiveÊÊEpisode: Louisiana Festivals

ÊRecipe Summary

Yield:Êone 9-inch pie Ê

1 cup graham cracker crumbs

4 tablespoons (1/2 stick) butter, melted

5 cups strawberries, rinsed, hulled, and halved

1 cup sugar

1/2 teaspoon vanilla extract

3 tablespoons cornstarch

1 tablespoon water

3 tablespoons brandy

Preheat the oven to 375 degrees F. In a mixing bowl, combine the crumbs and butter together. Press the mixture against the bottom and sides of a 9 inch pan to form a crust. Bake until golden and crisp, 7 to 8 minutes. Remove from the oven and cool completely on a rack. In a sauce pan, combine the berries, sugar, and vanilla. Stir over medium heat. until the sugar dissolves. Combine the cornstarch with the water and brandy in a cup and add to the berry mixture. Cook, stirring occasionally, until the mixture thickens, about 5 minutes. Remove from the heat and cool. Pour into the pie crust. Cover and refrigerate for a least 6 hours, or until the filling sets.

This sounds yummy. If any one tries it and can 'vouch' for it, let me know and I'll add it to the Recipe Site.

I just saw this post. Wish I had seen it sooner. It does sound good. I will try it when I get more fresh berries. I froze most of the ones I bought.

Katie, Who can doubt Emeril! L
