PEANUT BUTTER SURPRISE COOKIES
Makes about 4 Dozen Cookies
24 miniature peanut butter cups
1 can (14 ounces) sweetened condensed milk (not evaporated milk)
3/4 cup Jif Creamy Peanut Butter
1/4 cup Butter Flavor Crisco all-vegetable shortening or 1/4 Butter Flavor Crisco stick
1 egg
1 teaspoon vanilla extract
2 cups regular all-purpose baking mix
Remove wrappers from peanut butter cups. Cut candy into quarters.
Combine condensed milk, peanut butter, Butter Flavor Crisco, egg and vanilla in large bowl. Beat at medium speed of electric mixer until smooth. Add baking mix. Beat until well blended. Stir in candy pieces with spoon. Cover. Refrigerate 1 hour.
Heat oven to 350ºF.
Drop dough by slightly rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Shape into balls with spoon.
Bake at 350ºF for 7 to 9 minutes or until light brown around edges and center is just set. Remove to cooling rack.
Uh-Oh, I forgot to shape them into balls! Oh well they are good any how! I will make the rest of them like they should be! LOL Yummy for the Tummy! SusieK
