It is raining a soft gentle rain, which would be nice, if we weren't already soggy. We had drought conditions last year and record high rainfall this year.

I am playing hooky today and my whole family is spending the day together. We were going to head to the mountains, but the rain and clouds would hide the view, so we are just going to Charlotte or Winston-Salem and maybe see the new Matrix movie later.

Happy belated birthday, Ellen. Hope it was a good one.

Shari, what wonderful young women. I think the Bible will be a treasured keepsake for the graduate.

Susie, I can hear the happiness in your words. You are feeling almost normal again.

Kacee, I finally made the Black Bottom Cupcakes and they are great. I want to try toffee pieces instead of the chocolate chips next time.

Weight Watchers, someone gave me a great recipe and I can’t make it work. Have any of you tried the cake using the spice cake mix, a can of apple pie filling and the amount of water suggested on the cake mix box? It is baked in a bundt pan. My friend says it is very good, but I have thrown away 2 attempts.

Hope you enjoy MATRIX-Unloaded...GF & I went last weekend & we both enjoyed it. Better than the 1st one. Here it is raining today, too. Hope it does stop for the Festival of Flight events this week & weekend...attendance is down from expectation.

Hi Bren, I've not heard of that version of that cake with apple pie filling; but have made it using canned pumpkin and that's a widely used one by WW members. Try making it without adding the water. That's all that the pumpkin one is, one envelope of one step spiced cake and one can of plain pumpkin. Mix together and bake according to directions. If using apple pie filling, I'd look for a sugar free or lite one.

There's another one too where you add an envelope of a one step cake mix, plus a can of diet soda, and one egg white. Mix and bake according to directions. You can use any variation of flavors like coke/chocolate cake, cherry coke/chocolate cake, sprite/white or yellow cake, or whatever combination you'd like.

Hi Brenda, sorry that you weren't able to make the drive to the mountains after you took the day off but do hope that you were able to enjoy the day in whichever city you picked to visit. At least you were still able to spend it with the family.

We are getting rain now, started this afternoon. Not sure how much or how long it is expected to be with us. Will have to be sure and listen to the weather report here soon.

All done at the dentist, thank goodness. Now I just have to be careful while eating on that side this evening. By tomorrow she said all would be good to go.

Bren, I have never made the cake with apple pie filling before, but I have made a white cake with blueberry pie filling, and it turned out perfectly and was very good. When I made it, I did not add any water. I only mixed the dry cake mix with the can of pie filling, nothing else. Then I baked it in a sheet cake pan, not a bundt cake pan. Try that next time. Good luck! I may have to give the apple pie cake a try myself, and will try making it without the water. I'll let you know. Sounds yummy!

Rain here too. WW recipes are a disaster for me. Hope someone can help you get it right. Hooky is good. Being with family is good. No good- rain. I plan to finish end of semester paperwork this weekend and do some fun reading.
