I usually go along not straying from my path much......but since I started watching the Food Network a few years ago I have gotten more daring...lol.....well not that daring but a little.
This year after hearing about this product thinking that we couldn't get it in our neck of the woods Hunts started advertising it and so it is here now.....I am talking about Fire Roasted Tomatoes... at first I thought .....yeah sure.. but I have to say that they are the best things I have have tried in a long time. It takes plain old goulash and makes it extra tasty...
Lately with just the 2 of use I get really tired of fixing some little thing..I know that if I lived in a take out part of the country that I would be doing that......lol....but we don't.
The other day I had about 8 chicken wing parts the parts with meat on them.......lol I put them in the electric skillet and kind of browned the skin....with just a tad of EVOO.... then I put in about a cup and a half of leftover chicken stock, and a cup of TJ left over too.. added some of that rice pasta, can never remember what you call it but I keep it on hand to thicken things up.....and while it was cooking I thought about the tomatoes I put in a can of the FR tomatoes and let it simmer for a while........let me tell you it was really, really good... coarse I add onions and garlic and some salt and pepper...but it really took something blah and made it yummy......
Otherwise I found out that our health insurance went up and out deductiable for next year didn't go up ti just plain doubled. We are now putting out for deductable what we used to pay for a year of health insurance. That is just awful.....and I am afraid that the government is going to make things worse..

Retired and lovin'it.

Janet we are going to have to start calling you Rachel Ray or Ms. Emiril. Have you posted your recipe for goulash? I have some roasted tomatoes and want to use them. Thanks for letting me know.
Did you see the movie Julie/Julia? Man it was as good as watching Food Network..lol. I got a recipe off there for Bruschetta(sp?) It's so simple but soooooooooo good. I keep some in the fridge and fix it for a snack. I'm thinking BB posted a similar recipe. I have found I love tomatoes and Basil.
Sorry about the insurance. My deduction is 1200. Really sucks.
(((hugs))
.
Sounds yummy.....
Sorry about the insurance....I have a HUGE deductible....and the premimum goes up each year....bummer....
Hugs, Ruth
Love your post! Once my dh retired we had to start paying for my health insurance, in full, each month. The coverage used to be good but the school district changed plans a couple of months ago and the coverage sucks! Bigtime! We pay more and get less. What else is new, right?
As far and cooking for two.....I think I'm finally figuring out how to cook for just the two of us. My dh hates leftovers. We always had a kid who'd gobble them up but it's just us and the cats, now. If I buy a roast I cut it up into two or three pieces. One large whole chicken breast will feed us both. I still cook too many noodles. The big problem I have is with desserts. I've been making cakes and cookies and we are both getting F. A. T. Of course, all those goodies have landed in my gutt and my butt. Milky Ways are our downfall, too.
My daughter suggested we switch to carrot sticks and celery. I can't repeat what dh said about that! Of course, she's a size ZERO.
Gonna go wrap some presents. That should burn off some calories!
My aren't you becoming the adventurous soul!! I'll have to look for those Fire Roasted Tomatoes the next time I'm in the store! Does Del like that flavor?!
PS....that 'rice pasta' you mentioned....are you talking about 'orzo'?
