EZ 2 Day chicken soup

I'm entering this in iVillage contest, thought some of you could use this during the busy days ahead -

Ingredients:

1 cooked Rotisserie chicken from deli (flavor of choice)
1/2 large onion, chopped
2 stalks celery, sliced
2 lg. carrots, sliced
2 cups water
Dry noodles or rice

Night before: Pull meat from chicken and cut into 1" pieces, refrigerate. Put chicken bones, skin, and veggies & water in slow cooker, cook overnight on low.

Next morning: Remove meat & veggies from cooker. Cool cooking broth, skim fat off top.

Thirty minutes before meal: Cook and drain noodles, add broth, meat & veggies to pot, season to taste. More packaged broth, and pre-cooked veggies may be added.

Makes 8 servings, depending on the appetites.

Sounds good.....I just use canned broth and precooked chicken, and frozen veggies....tastes delicious....along with the carrots, onion, and celery...Hugs, Ruth

The main reason I cook the carcass is that the broth from those deli chickens tastes so good. I've never made a chicken soup from raw chicken that I've been happy with. All that foaming, scummy stuff just turns me off.

I made a quick run out today to get more wrapping paper, pick up RX & a few staples. Got a nice beef arm roast that is simmering with onions on the heavy Dutch oven right now. There will be plenty of leftovers, so after making our usual Sunday bacon/pancake breakfast, the kitchen will be devoted to cookie baking.

The snow here melted, then freezing rain came down for a while, so I'm glad I don't need to go out for a few days.

You guys are making me feel guilty.....


I make my own chicken stock plus I pick up some of Racheal Ray's when I find it to have on hand.


I roast my chicken till almost done and then pull it apart and simmer it in the stock.


Then add shredded carrot, some celery, onion. And home made noodles. I also like to add some Watkins chicken soup mix when I have it.


The other day they had some rotisserie chicken in the cooler at the store (it was the end of the day... and they had them for $4.99. That saved me 2 dollars over reg. prices.


We put some on our big salad that night and I wondered what to do with the rest and the Barefoot Contessa came on and she made chicken pot pies...I happen to have some pie dough in the frig (she made her own pastry) and thought this is going to be good for supper tonight. But there was to much so I made 4 of them and froze 2. Yesterday I got them out and put them in the toaster oven and fixed them for lunch.....very good, hot and filling.


I would have to say that chicken is my favorite meat. If you put 100 women in a room to say fry chicken you would have 100 different tasting pieces of chicken and all of them good.....
