White Chili & Lazy Girls' Lasagna

Here's the recipe for "White Chili".
This is not a pretty soup, but it is TASTY.
It's all about the spices so you can adjust it to your taste.
The amount of spices listed are the minimum you should use
to get the flavor.  Some friends use 2 cans of green chilies and more Cayenne pepper. I used more chicken broth than is called for.


WHITE CHILI


1 lb. Boneless , skinless chicken breast,
        (either cut in 1” cuts or shred)
1 med. onion
1 1/2 tsp garlic powder
1 tbsp oil
2 15 oz cans great northern beans, rinsed and drained
1 14 oz chicken broth
1 4 oz cans chopped green chilies
1 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp cayenne pepper
1 c sour cream
1/2 c whipping cream  (I used regular milk)

Saute onion and garlic powder in oil. Add beans, broth, chilies and seasonings. Bring to boil. Reduce heat; simmer for 30 mins. uncovered. Remove from heat and stir in sour cream and cream.

You can add shredded cheese to chili if wanted.
Serve with shredded cheese, corn or tortilla chips and chopped green onions.
*I like to serve it with dinner rolls.

Group this week when I have them here
for dinner.
                                    LAZY GIRLS' LASAGNA


1 (8 ounce) package spaghetti, cooked
2 tablespoons butter
1 cup grated Parmesan cheese, divided
1 (24 ounce) carton ricotta cheese
1 pound ground beef OR Italian Sausage
1 (25.75 ounce) jar Italian-Style spaghetti sauce
1 (8 ounce) package shredded mozzarella cheese


Preheat oven to 400 degrees F.
Line a 13x9x2-inch baking pan with aluminum foil .


Spray with non-stick cooking spray (coat well).

Combine hot cooked spaghetti with butter; stir until butter melts and coats spaghetti.
Add 1/2 cup Parmesan cheese; stir to coat.
Arrange spaghetti in an even layer in foil-lined pan.

Spread ricotta cheese over spaghetti.
Sprinkle with 1/4 cup Parmesan cheese.

Brown ground beef, drain;
add pasta sauce and heat until bubbly.
Spoon over cheeses.
Top with mozzarella cheese and remaining Parmesan cheese.

Cover with foil. Bake
30 minutes.
Remove foil cover and continue baking 15 minutes or until cheese is lightly browned.
Let stand 10 minutes before serving.

Deb the soup sounds good, but love the sound of the lasagna. I wonder how it would do with penne or zita pasta instead of spaghetti?

Just one (double!) question, Deb......may I assume that you are cooking the chicken first - before you cube or shred it?

Yes Ma'am, I cooked the chicken first.
I've never used canned chicken, but it would probably work.

Deb, who cares about 'pretty'. I'm into taste and sort of, smell. But mostly taste. lol
