The potatoes sound good, Shawna! My favorite are red potatoes roasted with a little rosemary, salt and pepper. They're better than french fries(and healthier, too)!

Yes, Linda. That reminds me. I make Spicy Potato Bumps. They have cayenne pepper, basil, oregano, cumin, garlic, rosemary, s&p, parsley, a little bit of virgin olive oil and then baked in the oven. Sooooo good.

Mine would have to be a meatloaf but with no meat...with tofu. It sounds really gross and normally I'm not a big tofu fan but this is good. The best is the next day when it's cold and you eat it on a wheat cracker. Mmmmm. It's very healthy for you. My mom found this recipe a couple years ago when I was on a vegetarian kick. I'm still not a meat fan but I don't call myself a vegetarian (I have nothing against people who choose this lifestyle, either).

dana i'm the same way .... i eat meat sometimes but i would live on pasta, and fruit if i could ROFL ... i mostly just eat chicken
