OK ya'll I need a easy quick and healthy dinner recipe that I can impress someone with. I would love to make something that tastes good but can be done rather quickly and healthy. SOOOOO....

My first thought is salmon with wild rice (from a box) and a salad. You could also easily add a roll or some bread. We sometimes buy frozen salmon, then brush it with a mixture of honey, dijon mustard and worchestire and grill it. That's pretty good. Could also be done without the marinade to save calories or could be baked.

One of my favs is...

Take some pasta (any kind, any shape)

Get some veges...zucchini, yellow squash, red bell pepper, red onion, eggplant (those are my favs)

Chicken breasts

Olive Oil

Balsamic Vinegar (or any other flavor you like)

salt and pepper

Boil pasta, cut up veges is bite size pieces, toss with a bit of olive oil, balsamic and salt and pepper. Put on cookie sheet and roast in oven until soft and carmelized.

While veges are roasting grill chick breasts (george forman or grill or pan) Cut into strips when done.

When all is done cooking toss pasta, veges, chicken in bowl and toss with a bit more of olive oil and vinegar. At this point I add crumbled feta cheese (you can keep it w/out or add any other of your fav cheese.)

Serve with a salad and/or rolls.

Very tasty the next day cold and you don't even have to serve this hot for dinner can be room temp. Also very little fat added b/c of using olive oil and adjusting to your needs.
