Hiya,

I just had one of my favorite lunches and I was wondering what one meal everyone else really enjoys that fits their lifestyle. Here's mine:

Bean Tacos

1/2 c. Fat free refried beans (there's a really good jalepeno black bean one made by Hyvee

3 taco shells

1/4 c. cheddar cheese (light cheese is half the calories but not quite as tasty, sometimes I do half and half regular and light)

2 Tbs fat free sour cream

Salsa

All of this for 390 calories (using whole fat cheese or 345 with light).

If I'm feeling really fancy I might throw in a skinny cow mint sandwich for desert, adding 130 cals.

I love a good spinach salad with spiced & sliced up chicken (cooked on the GF grill) and low carb ranch dressing...maybe some sunflower seeds on top and a little cheese too. But it's gotta be spinach...none of that iceberg crap..lol.

Mmmmmmm...I might have to have that for lunch.

I really like a nice big taco salad.

I make my own refried beans, and never add fat to them..

I put a good size helping of iceberg lettuce in a bowl, put about 1/2 cup taco meat, 1/4 cup cheese, sometimes I used refried beans, sometimes not. And instead of salad dressing I put 2 tbsp sour cream and 1/4 cup salsa...the two of them mix together wonderfully to coat the lettuce.

The only thing I really do miss in this is the crunchy tortilla chips :( but, it will all be SOOOO worth it when I get into smaller clothes!

speaking of....dh said I could go buy a new dress for Easter, but I find that I dont really WANT to buy more fat clothes...I would way rather wait til I can buy a 20 or a 22 instead of buying a 24 or 26 :( What do you all think?

Ohhh I cant wait to wear a size 12. ROFL..its a long way off, but it WILL happen.

I agree...it drives me nuts to buy clothes that I know are going to be too big in a couple months. BUT...for a special occasion I'd say go for it. Why not?? Just try to keep it inexpensive so you don't feel frustrated about "wasting" money.

I'm always trying new things, whether from a cookbook or Cooking Light magazine, or the food channel, so it would be hard to nail down one favorite since I don't repeat all that often. One thing I enjoy though, yesterday's lunch in fact, is a portabello, gardenburger, cheese, green pepper and onion "sandwich." I put blackening seasoning and a little brushed olive oil on these elements and put the whole thing under the broiler. Then stack them, openface, with the huge portabello making the bun. I love blackened *anything* so sometimes I vary the ingredients in this "sandwich" and, for example, use fish instead of gardenburger and omit cheese. But I really like that, and it's one thing I've repeated often enough to be a "favorite."

They're all over the country. The first one I went to was out in Oregon. About 2 years ago the opened one around here. They probably have them in every state except Texas LOL! We also have another steak house around here called the Lone Star.

we have steak houses out here but there is only one that has texas in it's name. taste of texas is awesome!!

i just picture the cows and boots everywhere when you said texas roadhouse
