I had totally delicious low carb fajitas.

This would make a great “take out” meal for those of you who bring your lunch to work. IMO. I ate this cold yesterday while in the car and it was still great.

Southwestern chicken breast strips (Louis Rich $3.29… for 6oz or 2 “servings”)

LC whole wheat tortillas (Buena Vida $1.50… for 8 tortillas)

Hot Pepper Cheese (Sara Lee $2.50…for 8 oz or 10 servings/slices)

Totals

CALORIES: 186

FAT: 11

SAT FAT: 4 (Mostly from the cheese)

CARBS: 8

FIBER: 3

I've got a veggie eggroll in the oven (150 cal) and I'm going to make a michealina's garden bistro asian veggie bowl (220 cal).

Yum!

Well Happy Birthday...and PF Chang's, that sounds so good. Haven't been there in ages.

I myself had a slice of cheese pizza and a small salad with ceaser dressing on the side. I figure it's better than my regular mexican or italian lunches, high in everything!

On a side note: I hate salads, I think I'm the only woman who does, but I hate lettuce. All kinds, especially the dark green ones, so eating a sald is a chore for me. Any suggestions on what I can do to either substitute or make salads more appealing???

Hey Kerstin...I don't know if you like baby spinach but it is all I will make a salad out of anymore. I got hooked on it when i was preggo and I can hardly stand iceberg lettuce anymore.

And no one said you *have* to eat salad...what about other veggies??

Other than that, I don't know what to tell ya, except I never liked salads for a long time and then suddenly, my tastes changed and now I actually crave them sometimes...lol. Good luck!

I had a steamed spinach "salad" dressed with soy sauce, sesame oil, and rice vinegar.

Chicken breasts grilled in peanut oil and coated with rosemary and fresh ground black pepper.
