I absolutely LOVE steamed zucchini. I steam it for an ultra-short time because I like it somewhat crispy.

I'm also a big fan of steamed carrots and raw baby spinach.

I guess I like any veggie other than brussel sprouts. ~LOL~

a roasted pile of broccoli, sweet red pepper, onion, asparagus, and a few baby carrots

carrots and celery dipped in tzaziki

butternut squash soup (just had 2 bowls for lunch, mmh)

steamed spinach with rice vinegar and a dash of soy sauce and sesame oil

steamed artichokes

Your making me hungry. The butternut squash sounds yummy.

I like Edeme(sp?) -soybeans. I can get a bowl and my kids and I will eat a whole bag.

I also love a great salad with lots of fresh veggies.

I love steamed green beans...the long ones...lol...they are soooo good and yumyumyummy!

I like all kinds of veggies, and I'm with you on the baby carrots and snowpeas for sure! I also like artichokes, the fresh ones, and I have one in the fridge right now that I'll steam later today, spritz a little (a lot) of lime juice, and then make a citrus dressing for dipping. Those things are really a meal in themselves, and I love 'em whenever I can get 'em. I also like portabellos, the huge ones, a lot. And I make those all kinds of ways, including using grilled portabellos as the bun (or burger, either way)for lunch.

I love carrots and snowpeas (really crispy on both). I also love steamed broccoli and steamed yellow squash and zucchini. And I love, love, love tomato's (cherry and large) with cucumbers in a vinegar dressing. Yummy! I guess tomato's are fruits though, right? At any rate, I could eat them all day long.

Butternut squash soup recipe - based on http://www.pcnr.com/news/1999/1013/General_Stories/39_Acorn_Squash_Soup.html

1 can fat free chicken broth + 1 can water

1 butternut squash

few stalks of celery

butter

cinnamon

cayenne pepper

salt

pepper

milk (or evaporated skim if you want it creamier)

Peel and chop squash in 1 inch chunks, chop celery and simmer in broth for 15 minutes at low/med heat.

Add a bit of butter (~1 teaspoon)

Season to taste with salt, pepper, cinnamon, cayenne

When veggies are soft, puree with a hand blender, add milk/cream and reheat.

Never met a vegetable I didn't like. Rachael Ray had a recipe for broccoli beef salad which I made on Sunday, and it was OUTRAGEOUSLY delicious. Rather than copy recipes here, if you're interested it's probably listed over on foodtv.com. Anyway, that's a definite ***keeper***. I also like taking whatever veggies are handy and tossing them into an omelet or frittata and this morning I had a wonderful greek omelet to which I added green, red, and yellow bell pepper, maui onion, and garlic with tons of parsley (along with feta, of course). Really makes me LOVE breakfast.

Ketchup is my favorite veggie...I like it poured liberally over a large basket of french fries. I'm torturing myself today...I have a real jones for some fries! SORRY:)

My REAL favorite veggies are steamed broccoli, carrots and cauliflower with a touch of olive oil and italian seasonings. I gave up the cheese sauce...aren't I good and virtuous?!?!?
