Dinner Plans ?

Part of the reason I started this post is I had this salad that blew all my other salad's I've made out of the water. So her's dinner, and dessert. (I had a 'me' day and sat at home and relaxed in my jammies, read my new Real Simple mag, and cooked.)

Dinner:

Six ounces of fresh top sirloin, seasoned with freshly ground peppercorns, sea salt, and fresh rosemary from my herb pot, pan seared til medium rare.

Garden salad with Romaine, mixed greens (WEEDS!), hot house tomato wedges, sliced red onion, a bit of shredded fresh basil (sweet) and 1/4 cup of Chevrie (herbed goat cheese) crumbled on top with a dressing of basil, olive oil and balsamic vinager, S & P.

Dessert:

Apple-Peach Crisp - MacIntosh apples, peach slices (frozen), oats, apple pie spice, orange zest, vanilla extract, a blob of I Can't Belive It's Not Butter

Three words. Oh. My. Goodness.

For those of you wondering about the goat cheese and haven't tried it, it has the consistency of cream cheese (but you can crumble it)and is slightly sweet and is sometimes flavored with herbs mixed in. It's very mild and delicious. But, I also like Brie, Stilton, smoked cheddar, Gouda..all strong cheeses

Is it obvious LIKE CHEESE ???

Part of the reason I had a fit over the salad, is because I really, really wanted THAT. I planned my own dinner and made it just for me. Now I know playing Martha Stewart solo is not always feasible, but it was so fun.

And it was actually HEALTHY, so I could still keep with el diet and still be happy. The sirloin was SO lean, it was comparable to chicken (which if I have any more of, I'll scream), the goat cheese has fat, and the olive oil is fat, but not too much. The dessert had no sugar except for the fruit, had lots of fiber (oats and apple skins)and just some ICBINB.

For the salad freaks out there, give it a try! (LINDA)

Hope everyone is well. I'll be headed to bed soon. Wicked tired.
