I've got a good one that I just made tonight. I've made it twice and tweaked it a little bit, it's very yummy and uses strawberries (which are in season now) but could also use other fresh or frozen berries. I made it will a full-fat Nilla wafer crust tonight and it was 300 calories, 8.5 grams of fat (all from the crust), and 53 grams of carbs. I didn't calculate fiber for you WW fans, but it would be easy to do.

Strawberry Pie

1 9 inch pie crust (low fat grahm will lower calories)

4 cups fresh strawberries

3/4 cup sugar (I'm going to experiment with splenda)

4 TBS cornstarch

3/4 cup water

4 drops red food coloring (optional, but makes it pretty)

Divide strawberries in half. Slice just under 2 cups and arrange in pie shell.

Mash remaining 2+ cups strawberries and combine with sugar in a medium saucepan. Bring to a boil over medium heat, stirring often.

In separate bowl, whisk together cornstarch and water.

Gradually stir cornstarch mixture into boiling strawberry mixture (add food coloring if used).

Reduce heat and simmer about 10 minutes (until thick) over low heat. Stir constantly. Do not try to rush this step or it will not set and it'll be runny.

Pour mixture over berries in pie crust. Chill for several hours until set.

Anyway, Trashy, I made a fruit crisp - I say fruit cause you can use anything, really -

and I sliced up some Mac apples, tossed them in a bowl with frozen peach slices, added some apple pie spice, vanilla extract, orange zest, and mixed THAT with uncooked oats and a little Splenda.

Bake that till soft/bubbly and fling some FF Cool Whip on it.......

Heaven. And high fiber, low fat, very healthy.

Sometimes I use pears, or cranberries with the apple.

sorry ya'll i just can't bake fat free and what not

i am a very good cook but man give me the real stuff.

now i know i great quick tres leches cake but it's no where near being fat free, carb free et al

Have you checked the food network online? You'd know their tastes, and be able to pick something that best suits them over there I'm betting! Or just check a search engine, plug in key terms (ie strawberries, lowfat, dessert). Lots of things will pop up.

Actually, I really like the lower fat no sugar added version better. I enjoy the taste and texture of the fruit, and my sweet tooth has calmed down quite a bit ( anybody remember my Mad Cake Fit a few weeks ago? And let's not forget the Cadbury Creme Egg Incident !)

Of course, someday I'll be out at a restaurant and have their apple crisp and will find it too sweet, but eat it anyway cause it's so gooey and lovely.

I still get the same pleasure out of my version, and I have the secondary satisfaction

of knowing I have lots of fiber and nutrients to go with it. I guess it's just what I got used to !




Edited today to add that I recind the comment about my sweet tooth, after the fudge i woofed yesterday.....
