thinking of:
for lunch a salad(lettuce,green pepper,ranch)
for dinner thinking of trying making chicken fried steak with mashed potatoes and vegetables prob corn and green beans...and if that doesn't turn out or i feel lazy spaghetti, meat balls and green beans
Glad you asked.....
Oh, I just had the most WONDERFUL dinner....at home, no less! I love summertime; all the fresh fruits and veggies. For dinner I had london broil on the grill, and grilled corn on the cob, asparagus, onion, and steamed green beans, and a cool marinated cucumber/onion/pepper salad and some sliced fresh tomato. The veggies, except asparagus, were all out of my garden and still warm from the sun! And the london broil, well a dear friend has a farm and it was one of his cows! I made fresh strawberry ice-cream (yup, our strawberries), but I was too STUFFED to eat it. And the best part, the whole meal still came in low cal and low fat! As I said.....oh I LOVE summertime!!
Breakfast was ricotta blintzes with fresh raspberries (yup, homegrown) and two strips of applewood bacon (thanks to my buddy's farm again), and for lunch (which was light today) I had a baked sweet potato with mango-papaya salsa, and a little later...some fresh cantelope with a bit of chopped mint.
I haven't done the calculations, but it's safe to say today was under 1,500 calories (or right around there) and very low fat. What a wonderful, wonderful, wonderful summer's day!
Let's see...I'll do calculations while I'm sitting here, widdling away the evening: breakfast was 360 calories, lunch was 210 (counting the later cantelope), dinner was 410 calories....gosh, that's w-way-wway under: It's 980 calories (I'm thinking that's gotta be wrong....I'll re-do it later)....I should probably try to eat the ice-cream and toss some strawberries on top, sometime before bed!! Anyway, it was a GREAT day!!!!!!!!!!!!!!!!!food-wise, and otherwise too.

Now you gave me a GREAT idea for what to do with the leftover steak, for dinner tonight. Thanks!

PS: Proscuitto is a highly processed meat product and full of fat. I wouldn't touch that stuff with someone else's 10 foot pole either.

So I had the wrap, later had some baked leftover ham, and when I got up for work had a big glass of low sugar/low carb OJ, and a salad with more ham chunks.
Most days I have my yogurt with almonds, but it was just gagging me thinking about it today for some reason.
Actually, I really feel like hell now that I think about it.
Blech.
