For those of you who like the cooking channel, as you know I do: today on 30 minute meals Rachael did a low calorie menu around blackened chicken pizza, chopped salad with cream dressing, and chocolate shakes. Something I'll definitely try soon (the recipe will be on the website, of course) and I thought I'd pass that one along.

I've only tried a couple of her menus in the past, and both were outrageously delicious. So I have high hopes for this particular one. Say, did you know you can make whipped cream out of fat free evaporated milk? I didn't know that. Stiff peaks too! If for nothing else, I've gotta give that one a shot. :)

HMMMMM..sitting here scratching my head wondering what the heck a 'stiff peak' is..sounds kinda kinky...I am not allowed to watch the cooking channel as I have a toddler and an 11 year old . What were the recipes you made that were so good ? Do post them..I need some new stuff to cook...It gets kind of stale when you make the same things over and over . Thanks for the heads up!

I just want to say, for the record, that I love Rachael Ray. She's a great cook.

Hi Tony,

On the program(s) she's mentioned her "Sweetie," so guessing you *and* my son are out of luck on that score! She **is** cute, though! And boy, can that woman COOK!!

Ha, Ha...the "peaks" refer to whipped cream consistency ;) I didn't know, you can put evaporated milk into the freezer for a few minutes and once it's cold the milk will whip up just like whipped cream, at obviously a fraction of the calories.

April, sounds like it's time to reclaim the television from the kids at your house! I bet you'd enjoy the cooking channel. I know that I've certainly gained a whole new bag of tricks just by having it in the background. In the meantime, if you want to take a peak at some new recipes, then everything on the various programs is also online at foodtv.com and you might want to browse there! The Rachael Ray program I'm referring to here is called "30 minute meals," though she does have another one "$40 a day," in which she travels on a food budget, and the recipes for items she chooses in the restaurants are also on the website. Another favorite of mine is Alton Brown, his program "Good Eats" is terrific.

I thought that I'd printed here the couple of recipe ideas of hers which I keep making? Maybe not, and if not....well, here's what I like especially. One day she used huge portabello mushrooms as "buns" in making some kind of burger. My own *take* on that idea (for days when I'm rushed and don't want to mess up the kitchen) is this. On my oven grill pan I put a huge portabello, a veggie burger, half bell pepper (flattened), some onion slices, thick tomato slices, and I spray lightly with olive oil, liberal blackening (or grill) seasoning, and I broil it, both sides. Then when done I assemble (as a hamburger with portabello as bottom "bun") and top with reduced fat cheese (my favorite is jarlsburg) and pop it back under the grill to melt cheese. It's wonderful, and very very low fat. I usually top with spicy mustard or horseradish, or sometimes salsa. A portabello cap only has 20 calories, and obviously 0 fat grams. So when you figure it, the meal comes in under (way under) 300 calories, even with some veggie chips added to that!

The other thing (and I know this is on the food tv website) is a beef broccoli salad. Basically, make a salad with baby greens and add cilantro, raw pea pods, lightly steamed chilled broccoli florets, shredded carrots. Grill some steak (or use thin strips of leftovers). The dressing is the special thing here, and I love it. In a blender put lime juice, ginger, garlic clove, red pepper flakes, rice wine vinegar, a duck sauce packet (or marmalade, if you want) and wiz in a little oil. That's it! You control how much of what (and I'm easy on the oil, heavy on the vinegar and lime). I don't eat salads often, but I'm absolutely crazy about this one! You can do the same thing, but use chicken and cashews. It was a great idea, and part of a "skinny" program she did this season.

I also kinda liked a breakfast in bed program she did this season: french toast, fruit compote, mimosas.

Huge foodtv channel fan here! I watch'em all. I like Rachael too. Recipes very easy to replicate b/c she uses "help" from pre-made products as well! She's very down to earth and nothing to frou-frou. I've made quite a bit of her things but I like how she's getting a little bit more health concsious now with her shows!

I really like Rachael Ray. She was here in my city about a month and a half ago! Look for the Asheville, NC show it should be on soon. She was down at our river front market. I like the food channel, because, well, i like food. So i watch most of the shows. Now i have an idea for a show i would like to see. I think Iron Chef is one of the funniest shows ever put on (who knew you could do that with squid?!?!) I want to see another american battle with Rachael Ray and one of the Iron Chefs! You know good and well she would rock thier worlds! LOL! ^v^Christie
