Making a "cookbook"

I know this is in the wrong place but I thought it might spark some decent convo!

I am making a cookbook from the other board I post on (ww board) there were some great meal ideas there.

Does anyone have some yummy recipes that are WW? I would greatly apperciate it.

I want to get away from eating a frozen meal everynight and I love to cook.

CAULIFLOWER MEDLEY

A zip-top plastic bag works great for marinating because once the air is squeezed out of the bag, the marinade coats the food and no stirring is required. You may use a large bowl instead, but remember to stir frequently so the food gets evenly marinated.

1 cups fresh cauliflower, broken into florets

1/2 cup fat-free Italian dressing

2 Tbsp. Sliced ripe olives

2 Tbsp. Capers

1/4 tsp. Cracked pepper

1 4oz jar diced pimiento, drained

Steam the cauliflower, covered, for 10 minutes or until crisp-tender. (Don't let it get mushy. I usually rinse the hot cauliflower in cold water to stop it cooking.) Place cauliflower, dressing olives, capers, pepper, and pimiento into a large zip-top plastic bag. Seal and shake gently to coat the cauliflower with the dressing mixture. Marinate in the refrigerator at least 8 hours. Serve cauliflower with a slotted spoon.

BROCCOLI SALAD

3/4 cup nonfat mayonnaise

3 Tablespoons sugar

1 tablespoon red wine vinegar

1 head broccoli

1 small red onion

6 slices bacon -- cooked and chopped

Cut broccoli (including stem) into small pieces and blanch in boiling water

for 3 minutes. Rinse with cold water and let drain. Finely chop red onion.

Mix first 3 ingredients in bowl until well combined. Add broccoli and

onions. Refrigerate 2 hours. Before serving add bacon.

6 servings, 1 POINT each

This one is really, really good... it comes out looking kinda gross cause of the cream cheese, but it tastes heavenly.

Herbed Turkey Breast (7 Points)

1 turkey breast, boneless and skinless (5 lb)

2 T butter or margarine (change to light butter)

1/4 c garden vegetable flavored cream cheese (probably could get light/FF)

1 T low sodium soy sauce

1 T fresh parsley -- minced

1/2 t basil -- dried

1/2 t sage -- dried

1/2 t thyme -- dried

1/4 t ground black pepper

1/4 t garlic powder

Place turkey in stoneware. Combine remaining ingredients and brush over turkey. Cover and cook on low 10 to 12 hours or high 5 to 6 hours. Makes 8 servings.

Nutritional information: 343 calories, 5 gr fat, 70 gr protein, trace carbohydrates, 184 mg cholesterol, 244 mg sodium, trace fiber.

Mocha Chocolate Chip Cheesecake Bars

36 servings (1 bar per serving)

Source: Better Homes and Gardens

1 18-oz package refrigerated chocolate chip cookie dough

1 8-oz package reduced fat cream cheese, softened

1/3 cup sugar

1 egg

1 tablespoon instant coffee crystals

1 teaspoon vanilla

1/2 cup miniature semisweet choclate pieces

Heat oven to 350 degrees. Crumble the cookie dough into a 13x9x2-inch baking pan. Press evenly onto bottom of pan; set aside.

Combine the cream cheese, sugar and egg in a medium mixing bowl; beat by hand until smooth. Stir together the coffee crystals, vanilla and 1 tsp water in a small bowl until crystals are dissolved. Stir coffee mixture into cream cheese mixture.

Spread evenly over dough; sprinkle with chocolate pieces. Bake for 20 minutes or until completely set. Cool in pan on a wire rack; cut into bars. Makes 36 bars.

Per serving:

109 calories, 6 g fat, 71 mg sodium, 12 g carbohydrates, 0 g fiber
