My plans for the weekend are to find some bookshelves so we can get rid of the last pile of boxes from our move. I've got almost every room done except our bedroom cuz I don't have anything to do with the 3 boxes FULL of textbooks.

I don't have time to read much, currently "The Difficult Child" is on my bedside table, but I don't think you'll be needing that, LOL! We did see The Incredibles last week, it was hilarious, much better than I expected.

As for Thanksgiving, we don't do much since it is just the 4 of us...well, really only 2 1/2 since DS1 doesn't eat a whole lot & DS2 doesn't eat at all (he's fed through a g-tube). We'll roast a turkey breast and maybe make a small side dishe or two and probably bake a pumpkin pie. Not too much cuz we don't need all those leftovers!

Why not just add another veggie or two, like green beans and peas? Or a large salad which is cheap and easy to make. That'll add a bit more to the list without adding a bunch of work or cost (:

You could also make a brocolli casserole or something like pasta salad.

Sorry it took so long to get back to you. We have been having problems with our electricity(r lack of...). These are some of my standards. They are not healthy, but they are good and easy. I agree with the others you need more vegi's

1. Honey glazed carrots

2.Green bean mushroom alfredo
1/4 cup sliced almonds(toasted, but I usually don't)
1/4 cup chopped red bell pepper
1 can mushroom pieces
1 pkg frozen green beans
1/4 cup alfredo sauce

combine green beans, bell pepper, and 2 tbsp of water in microwave safe bowl. Heat for 10-14 minutes.

stir in mushrooms, alfredo sauce and sprinkle with almonds. cook uncovered for 2-3 minutes or until bubbly around eddges.

3. Raspberry-cranberry Salad
1 pkg. Rasp. Jello. dissolve in 1 cup of hot water.
add 1 box frozen raspberries.

Let harden

Spread 1 cup sour cream over the top.

Mix 1 pkg strawberry jello with 3/4 cup of hot water.
add 1/2 cup of crushed , drained pineapple.
Add one can of whole cranberries.
Pour over the other layer and chill.

I make it in a glass dish because it is so pretty with the red and white layers.

I'm preparing for finals this weekend. It's the worst time of the year! GGRR.

My parents and I (and maybe my brother) are checking into a hotel on the Oregon Coast Wednesday night. Mom has made the pies already, but we're going to be ordering a pre-cooked turkey dinner from Safeway. We'll probably take the dog for some walks on the beach and just relax. I need it--my first final is Dec. 3!
