I usually just cook thinly sliced carrots in water with butter and a little honey.
The actual recipe I used before was taken from the joy of cooking

Carrots Vichy
2 cups thinly sliced carrots
1/2 cup boiling water
2 Tbsp of butter
1 Tbsp of sugar
1/4 teaspoon of salt
(1 teaspoon of lemon juice)
Cover the pan closely. To form a glaze with the butter and sugar, simmer the carrots until the water is absorbed. Sprinkle with chopped parsley.

I do the same thing except put in honey and no sugar or lemon juice.

This is super easy.

We are posting menus and receipies like a bunch of junkies waiting for the next fix! hahahaha!

so here is mine....:0)

I am going to take Sweet Potatoes.

Boil about 4 large sweet potatoes.
When done peel and slice them into long steak fingers.
Lay them babies in a baking pan.
Put plenty of real butter pats on top at least 1 and a half sticks...I use two.
Put a cup of brown sugar (or more) over those taters and butter pats
Cook in oven until the surgar and butter is melted
Put a cup of walnuts or pecans on top and slip back into the oven to heat the nuts
Don't burn the nuts.
Pull out of oven place large marshmellows on the entire top of the dish and slip into the broiler for a very few mintues so that the marshmellows will melt and lightly brown.

That is my favorite desert....but gives me lots of gas...:0) (not such a bad thing considering the place I have to go eat it at!)
