Hey, gang! I just wanted to stop in and wish everyone a MERRY CHRISTMAS!! I hope everyone will take it a little easier, diet-wise, and enjoy the holidays. That doesn't mean going crazy, of course, but relaxing and enjoying some classic favorites doesn't hurt that much, as long as you can keep it in moderation. Everything I made this year was low carb, so I feel good about that. I'm not really the cook of the family, my twin sister is a superb cook, so I ended up calling her a LOT with cooking questions lol!! I did something really stupid with the low carb cheesecake! The recipe called for one "stick" of butter, and I just figured that a stick would be one of those half butter things you buy, not a whole pound. Anyway, that is what I used, but I should have read the recipe closer and realized that it was for the CRUST LOL!!! So I put about a cup of butter in, and after I mixed together all of the ingredients I realized that for a CRUST, it sure seemed liquidy!! It was like pancake batter!!! So, stupid me, I thought...."well, maybe it's supposed to be that way..." (believe it or not, I HAVE made some very successful cheesecakes in the past...) So I go ahead and put it in the oven to bake the crust...and a few minutes later I open up the oven to see butter dripping everywhere out of the bottom of the springform pan!! I took it out, and it actually did cook pretty well, it was nice and flaky, and just the edges were burned a little bit! So I called my sister in a frenzy and she laughed at me! I just decided to use it the way it was, since it's just the crust, and so I proceeded to make the filling. I'm not even sure how it turned out yet, since I haven't taken it out of the pan yet...it's for my family christmas tomorrow. But if people don't like the crust, they don't have to eat it. It was a butter pecan cheesecake, but I'm going to call it the butter butter pecan butter cheesecake lol!!
Another funny thing that happened was, Andre's brother and his brother's girlfriend came over last night and the gift they gave us was this awesome 7 quart crock pot. When we opened it, Andre said "oh oh..." and went and got the crock pot he had bought for me for christmas!!! And then I proceeded to tell Andre that I had bought HIM a crock pot as well!! It was sort of a bummer, because I wanted to give Andre a gift that he would really love, but we still got a crock pot...and a great one! The one I had bought was only a 5 quart, and the one Andre bought for me was a 6 quart. So we're going to keep the one we got from them, and return the 2 we bought for eachother, and maybe buy a George Foreman grill or something like that! So if anyone has some good low carb crock pot recipes they could share, I'd really appreciate it!

Merry (belated) Christmas, and I hope everyone had as lovely a day!

That's one of those truly classic holiday stories that will live forever! I really enjoyed reading every bit, and was LMAO all morning...

Here's another for this year: We visited my DSO's brother, Phil, for dinner-- a very warm, but rather sedate, celebration of the day. Phil left to take his elderly mother-in-law home... and somehow things cut loose a bit. Cal, my DSO, began playing piano like a maniac, and the rest of us (middle-aged all, except the 11 year old nephew) were dancing and singing and LAUGHING, by golly!

Phil walks back in to this boogie-woogie fest, and after trying to blame it on his son ("Zachary, turn that music down!"), he becomes so flustered that he semi-stomps down the stairs, halts at the landing, and lets out with the phrase that will live in family infamy:

"CAT, get OFF the floor!!!"

If the guy thinks he's ever living that one down, he's got another thing coming...
