Am I eating too much???

I am so frustrated. I lost my first 11 pounds by weighing myself several times a day, obsessing over the numbers, not allowing myself to eat after 1 in the afternoon and I know this will not work for the long run so I am trying to straighten myself out. First of all, I have placed my scale out in the shed only to be retrieved once, maybe twice, a week. I am going to measure myself tomorrow morning so I have that to gauge my progress as well. But I did weigh myself today and the scale is not kind. So if anyone can tell me, am I getting way too many calories. I know what I'm eating isn't exactly superb but I feel I have to learn portion control and be able to eat with my family or again I will never stick with it. So here goes:
Breakfast:
2 slices toast with a 1/2 teaspoon PB split between them
banana
Snack:
1/2 cup pistachios
Dinner:
tuna sandwich on toast with a huge slab of lettuce
lettuce salad with onions, a few croutons, fat free dressing
Snack:
2 cups of light popcorn
Supper:
1 cup of fried potatoes and a couple of bites of meatloaf, didn't like it
I need to up my veggies and fruits but won't be able to get to the store till next week. It is 70 miles away. Please any advice would be greatly appreciated. As far as exercise, this is my 8th day straight of 45 min. tae-bo and will be doing my treadmill tonight. Please tell me what you think and be brutal, I need it.

It's really impossible to know whether you're eating too many calories because you haven't given any indication of your portion sizes. My guess is that you didn't eat nearly enough to fuel your body for the intense workouts you're doing. You should make the effort to count your calories so you know how much you're eating. Take a day off from the exercise. Eight days in a row doesn't really allow you any recovery time, which you will need to prevent injury and learn sustainable habits. Don't beat yourself up over your weight loss. Remember that the changes you're making are permanent changes, and don't expect things to happen overnight.

I agree with Jess....if you really want to know if you are eating too much then you need to count up the calories.
I agree with what everyone has already said...especially about not eating after 1 in the afternoon. Do NOT starve yourself. Your body needs that food for fuel and with as much as you're exersizing, you'll either wear yourself out or injure yourself because your body can't keep up with you. Just try to make healthier food choices. More fruits and veggies and whole grains. After a workout, for example, I have a bottle of water and an apple or a Yoplait yogurt (low-fat, low calories) with a bit of Grape Nuts mixed in (for fiber as well as the crunch just being more satisfying). But also....try not to weigh yourself more than a couple times a week. Your weight is naturally going to fluctuate from day to day. You'll see more results if you only weigh yourself say once a week. BTW, one to two pounds of weight a week is healthy. I also remember hearing somewhere years ago, when my mother lost her weight, that in the beginning of your dieting/lifestyle change, you're going to lose more weight, because part of what you're losing is water weight gain.

It is more what you eat rather than how much. For example you can eat a lot more vegis than something with lots of fat or sugar. These are a few things I see that might help. Either do Pistachios or Peanut butter...don't do both. Nuts have a lot of fat. They are very healthy for you so they are okay but just don't go overboard. Are you doing whole wheat/grain bread? That makes a big difference. How are you frying your potatoes? Instead take some red potatoes and slice them. Put some salt(a little) and Rosemary and drizzle them with a little olive oil. Bake them in the oven. They are great that way and a little bit healthier. I would replace some of my snacks with fruits and vegies. Also try adding some calcium like milk, low fat cheese or fat free yogurt. Your bones will thank you later.
When you say that the scale was not good to you this week, did you gain weight or just not lose as much as usual. It is not uncommon to lose a lot (5 pounds or more a week) when you first start a diet. Then it should even out to 1-2 pounds a week. It sounds like you were not eating a lot before. Your body may be reacting to that and holding on the weight. It is almost like it thinks you are starving. The best way to overcome that is to eat lots of healthy food.
