So, I had a big salad for lunch today. Healthy right??? It might have been if I hadn't added: full-fat cheese, 2 hard-boiled eggs, avocado, full-fat salad dressing. 600 calories with 300 fat calories....arrgghh! I can do better than this! It will be hearty vegetable soup for dinner tonight. LK

Look at it this way...cheese has bone-building calcium, hard-boiled eggs gave you some muscle-building protein (besides, they're delicious!), avacado is a good source of vitamins A and C, and if I'm not mistaken (someone please correct me if I'm wrong) , the fat in an avacado is heart-healthy...I'm sure you didn't put tons of the avacado in anyway, right?
