What kind of diets are you on ?

I am trying to count calories staying between 1200-1500 a day , I was just wondering what is working best for the rest of you ?

My current eating plan is to do about 5-6 mini-meals a day to total no more than 1300-1400 calories. I also give myself 1500 extra calories for the week to eat out on or eat a special treat on any given day without guilt. I also aim for 9-10 servings of fruits and veggies a day and 4 servings of low-fat/fat-free dairy and 1 full fat dairy daily.
I just started back on this plan, but it helped me lose 50 lbs a year and a half ago, which I have gained back due to going hog-wild (pun intended) with food.

Because I can only do some upper body exercise (injuries to legs/knees--surgeries needed), I can't lose weight on over 1000 calories. Last week, for a 3 day weekend, I had only nutritious (mostly clear) liquids, and followed that with my usual pretty healthy 800-900 calories this week. So far, so good.
I am trying for a different approach though--perhaps changing my tactics every week, or every month.

I started eating 1800 calories a day and am cutting back 100 calories every week until I get down to 1500. After I get to 1500 I may continue depending on my success.
I'm also trying to get in touch with my hunger signals based on a 1 - 10 scale.
1 - starving
2 - very hungry
3 - hungry
4 - mild hunger
5 - satisfied
6 - mildly full
7 - moderately full
8 - full
9 - very full
10 - uncomfortably full
I try to eat only between the 1-3 range and stop between the 5-7 range.
