Just wondering what everyone's having for dinner tonight. My boyfriend and I are getting together again tonight and I have no clue what we're having. We had Italian baked chicken last night, but it's all gone. Hope everyone has a great day!

We are having Mock Lasagna from the crockpot. I am using my Moms' recipe but "lightening" it. Although I am tempted to make Quick Chop Suey as we had WW Alfredo w/chicken and broccoli last night --- since I didnt spill plans to anyone here yet and it only has to cook on high for 3 hours I can wait a bit to decide.

We're having speghetti and meatballs with garlic toast. A classic very easy dinner that I know everyone will eat(my boys are SO picky. It's so difficult to find stuff that's LF AND that they'll eat). Italian baked chicken sounds good.

A taco casserole recipe I found on-line.I substitute a few things,like ground turkey instead of ground beef,light sour cream,and add fresh lettuce and tomatoes to the top after it's baked.It's yummy :o)

Salmon, brown rice with herbs, and steamed veggies. This is one of the few meals that I can make for daughters, husband, elderly relative on special diet, AND me!

Broiled chicken with salsa on top. This is a meal that my husband loves and it's quick & easy to make. I consider it one of my success meals. Since Monday's are never easy, I like to start the week out with something successful. Tomorrow is a roast in the crockpot and Wednesday is baked chimichangas (using the leftover roast). With teenagers in the house, I have to plan the week out in advance. I don't have to spend time trying to think about what I want to make and if one of the kids are at home, they occassionally will start supper for me. The harder part for me is the side dish. My husband is a basic potato or pasta guy so I tend to have more problems coming up with leaner side dishes.

I recently came across McCormicks seasoning for Italian Chicken -- that's now become another success meal for us.

Ok, I think I've figured out what I want for dinner. If we go out to eat, I want Applebee's--I love their chicken fajitas. I get them without rice and with extra green peppers and onions. I don't eat the tortillas and dip the chicken/peppers/onions in salsa. Mmmm. Or, if the weather holds out, I think I'll see if my boyfriend wants to grill. We can get some lean hamburger, chicken breast and maybe even some lowfat hot dogs. I only wish I had a good low fat recipe for potato salad that I like. Everything sounds so good.

Small world...we had something similar last night for dinner, and I did the exact the same thing (LF sour cream, reduced fat crescent rolls for the crust, lettuce on top). Except I just used the 7% fat ground beef because my husband said he didn't think it would taste as good with the ground turkey. I'd be curious to know how it tastes using the turkey, if you can taste a difference.

I use ground turkey for almost everything now and no one can tell the difference.I've made the taco casserole before,used the turkey and it tasted just as good.
